When it comes to meal prepping, I am sure to get creative with a variety of breakfast ideas so that i do not get satiated. For me variety is key, you will never see me enjoying the same thing every day, because lets be honest, that is BORING. But you know what is not boring? These pumpkin chia and hemp seed pudding. Now some people think they can only enjoy pumpkin items during “pumpkin season,” but for me pumpkin season is year round!
The key to the best chia + hemp seed pudding is blending it all in a blender. The consistency is just the best and the only way I like to make my chia + hemp seed pudding.
Pumpkin pie chia and hemp seed pudding
- 1/3 cup chia seeds
- 1/3 cup hemp seeds
- 1/3 cup pumpkin
- 1 1/2 cups homemade pumpkin almond mylk
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 2 medjool dates soaked
- Add everything to blender, pour in mason jars, top with vanilla bourbon coconut probiotic yogurt, and crushed pecans.
