Air fried coconut shrimp:

One of my favorite meals growing up was coconut shrimp. Whenever we would go out to a seafood restaurant and they had on the menu, you better believe I was ordering. Since I have been obsessed with my air fryer and just want to make everything in it, I thought why not create my own version at home. This recipe is super easy to prepare and will be a great weeknight dinner meal since it can be prepared in under 20 minutes.

For the coconut shrimp here is what you are going to need:

  1. Wild caught shrimp
  2. 1 egg and 1 egg white
  3. Tapioca Flour
  4. Shredded coconut
  5. Salt and pepper to taste

How to prepare shrimp:

You want to make sure you clean your shrimps before cooking. You will peel the shell off if they have shell on, take a pairing knife and cut a slit down the middle of the shrimp and remove the vein, and clean with a paper towel. Then season with salt and pepper and set aside.

Dredging stations:

And to create your dredging stations, first whisk your eggs in a bowl and set aside. Mix your tapioca flour and coconut shreds in another bowl and set aside. And dip the shrimp in the egg wash, then the coconut shreds, add to a sprayed air fryer pan, and set your air fryer to 370°F and cook for 10 minutes.

I paired mine with some pan fried cauliflower gnocchi and roasted broccoli for a quick weeknight dinner.

Ingredients

  • 1 lb raw wild caught shrimp
  • 1 egg + 1 egg white
  • 1/4 cup tapioca flour
  • 1 cup shredded coconut
  • Salt and pepper to taste

Instructions

  • Dip shrimp in egg wash
  • Now Dip in flour + coconut mixture
  • Place in air fryer and cook 370 for 10 minutes.
