This weekend is my birthday!!!! I wanted to get my meal prep done ahead of time so that I could enjoy my birthday weekend. I knew that I didn’t want to spend a long time in the kitchen, so I focused on meals that take 20 minutes or less to prepare. This meal prep took me a little over an hour and will provide me breakfast, lunch, and dinner options for the next 3-4 days. I can’t wait to see what you all are meal prepping this week.
For this week here is the line up:
This is one of my favorite summer dishes because it is super light and refreshing. I like to meal prep mine on Sunday and during the week enjoy as a cold zoodle salad. You can enjoy it warmed up as well but I personally like it chilled better.
Meal 2 Breakfast on the go idea:
One of my favorite on-the-go breakfasts are baked oats. You can meal prep them ahead of time and the morning of while getting ready for work just add to your oven and bake. These are my strawberry shortcake version with 0 added sugar, gluten free, and vegan.
Meal 3 Side dish Idea:
I am all about all things strawberries and this strawberry mint bruschetta is a must make! Meal prep it on Sunday and use it as a garnish for a variety of dishes. Stay tuned this week to see how I use it in a variety of meals for the week.
Here is a simple, satisfying, and delish one pan meal. Pesto broccoli slaw pasta with ground chicken, this meal is delicious warm or cold.
I also made a batch of roasted root vegetables to throw on the side of various dishes or to have as a snack. I simply threw in beets, carrots, Brussels sprouts, turnips, and parsnips, drizzled some avocado oil, added salt and pepper, and Organic India Mindful Lift (fermented adaptogens + herbs).
