Spring Crudité Platter:
I don’t know about you but I get so excited for spring. Especially all the delicious and fresh spring produce you can find at the farmers market. And one way I like to enjoy all the fresh spring produce is in a loaded crudité platter. And it is a great option if you are entertaining or need something to bring to your spring festivities.
Items you will need:
Feel free to use any seasonal produce you have available to you. But here is a list of what I added to my platter.
- Beet Hummus
- Cilantro Greek hummus
- Guacamole
- Snap peas
- Rainbow carrots
- Blanched asparagus
- Rainbow cauliflower
- Blanched green beans
- Radishes
- Mini bell peppers
- Cherry tomatoes
- Persian cucumbers
- Celery
Preparing the homemade hummus:
One of the easiest things to make at home is homemade hummus. But if you are in a time crunch, feel free to pick up your favorite store bought hummus. Simply add all the ingredients for each hummus (separately) in a food processor, and process until you get a smooth and creamy consistency. And the nice thing about making it from scratch you can tailor the flavors to your liking. I made a roasted beet hummus and Cilantro Greek Hummus, which are both picky eater approved.
Making the guacamole:
I personally love dipping veggies in guacamole. And so there will always be guacamole on my veggie platter. And I keep mine simple. Avocado, salt, pepper, garlic powder, and juice of 1/2 a lime, mix it all up, and enjoy. And you could also serve a side of crackers, pita bread, or chips to go with this platter and all the dips too.
Creating the platter:
And the fun part about creating the platter is there are no rules! But I do like to start by adding my bowls with the hummus and guacamole. And work around those dishes by adding all the different fresh produce. And I do keep in mind the color combinations and try to mix and match the colors I use, to make it look extra vibrant, and colorful.
