Soft baked Gingersnap cookies

Ingredients

  • 1 egg
  • 1/4 cup cashew butter
  • 1/4 cup molasses
  • 1 tsp gingersnap sub allspice
  • 1 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup melted vanilla Madagascar ghee
  • Pinch of salt

Instructions

  • Roll into cinnamon sugar
  • Chill dough, roll into balls, roll into sugar, add to lined baking dish, flatten with hands.
  • Bake 350 for 9-11 minutes.
  • Drizzle with raw coconut butter.
