I developed this recipe back in 2016 when I was in need of a quick, yet satisfying dessert. Ever since then it has been one of my after dinner staples when I don’t have anything prepare and need something quick to satisfy my sweet tooth. It is the easiest dessert to create and is foolproof!  You simple mix all the ingredients in a bowl, add to a greased mug, and cook in the microwave for 1 1/2-2 minutes. Then top with your favorite yogurt, some fresh fruit, and ENJOY!

Peanut Butter Coconut Flour Mug Cake

Ingredients

  • 2 Tbsp coconut flour
  • 1 Tbsp Coconut oil
  • 1 pasture raised egg
  • 1 Tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp baking powder
  • 3 Tbsp almond mylk
  • 1 ½ Tbsp powdered peanut butter
  • 1-2 Tbsp mini chocolate chips

Instructions

  • Mix everything in a bowl
  • Add to a greased mug
  • Cook in microwave for 1 ½-2 minutes
  • Top with coconut yogurt and fresh strawberries
