Peach Salsa:
Summertime isn’t complete without some peach salsa! And if looking for a way to use up the last of your peaches, then this is a must. And it is super easy to prepare, it can be meal prepped ahead of time, and the perfect addition to a variety of meals for the week.
Ingredients needed:
- Peaches
- Red onion
- Persian cucumber
- Cilantro
- Salt and pepper to taste
- Olive oil
- Limes
- Add avocado day of consuming
But if you can’t get a hold of any fresh peaches feel free to use mango or strawberries in place.
How to prepare:
I chop up all my fruit and veggies into bite size pieces, add to a large bowl, juice the limes, add olive oil, salt and pepper, and mix. And the day I plan on enjoying I’ll add in some fresh chopped avocado chunks.
Storing:
And for storing the peach salsa, I add to a mason jar or glass Tupperware, and store in the refrigerator. But be mindful, the longer it sits, it will get a bit soggier. Because of this, I typically will consume within 2-3 days.
How to use the peach salsa:
I like to add mine to some grilled wild caught cod, grilled chicken, air fried salmon, or just for dipping some chips or crackers in it. But the possibilities are endless with this salsa.
Fish bowls with salsa:
And one of my favorite ways to enjoy the salsa during the week is in fish bowls. In this bowl I added instant pot rice, wild caught cod (seasoned with Primal Palate Taco seasoning, olive oil, salt and pepper, lime juice). And guess what? It was picky boyfriend approved, yay!
Appetizer:
I paired mine with some cauliflower crackers because that’s all I had. But it would be great on sliced baguette, sweet potato rounds, chips, or crostini’s. And sure to be a crowd pleaser and your next summertime shin dig.
