Mango Salsa
Let’s get this party started with the freshest mango salsa. Whenever summer time hits I instantly go into craving this mango salsa. Because it goes well with almost every dish and can easily be meal prepped on Sunday for the week.
What you will need:
- Chopped mango
- Cilantro
- Red onions
- Red bell pepper
- Jalapeno
- Cabbage
- Juice of limes
- Olive oil
- Cumin
- Coriander
- Salt + pepper
How to prepare:
I add all the ingredients to a large bowl, mix, and let sit in the refrigerator for at least an hour. And once it has chilled I like to serve it with a variety of meals for the week.
What to serve this salsa with:
The possibilities are endless when it comes to using this mango salsa. I like to add mine to fish tacos, with some wild caught cod, with some plant-based “meat” tacos, or by itself with some chips.
Mango salsa
Ingredients
- 1 Mango chopped
- 1/3 cup red onion chopped
- 4 Limes juiced
- 2 tbsp olive oil
- 1 Jalapeño deseeded
- 1/2 cup diced cilantro
- 1/2 cup red cabbage
- 1 small red bell pepper chopped
- 1/2 tsp cumin
- 1/4 tsp coriander
- Salt and pepper to taste
Instructions
- Mix and store in fridge.
