No Sugar Added Strawberry Banana Bars:

I’ve been trying to tame my sugar dragon and these no sugar added strawberry banana bars are doing the trick. But if you want to add some sweetener it is totally able to be added to this recipe. But I found that with the banana, coconut, and drizzle of coconut butter it was sweet enough to satisfy my sweet tooth.

Ingredients you will need:

  1. Ripe banana
  2. Coconut oil
  3. Coconut milk
  4. Vanilla extract
  5. Almond flour
  6. Coconut flour
  7. Tapioca flour
  8. Salt
  9. Baking soda
  10. Coconut shreds
  11. Strawberries
  12. Coconut butter

How to prepare:

These bars are super easy to prep. I simply added my wet ingredients and mixed. And then I add in the dry ingredients, mix, fold in the chopped strawberries and coconut shreds. Then I add the batter to a lined 8×8 baking dish, top with strawberry slices, and bake 350 F for 25-30 minutes or until a toothpick comes out clean.

Optional sweetener:

If you aren’t like me trying to tame your sugar dragon and want your bars to be on the sweeter side. Then I would recommend adding about 6 Tbsp of maple syrup or any type of sweetener you prefer.

Meal prep ahead:

I meal prepped these for the week for an easy grab and go breakfast option. And I honestly prefer making these ahead of time because I like them better cold after sitting in the refrigerator. But you can also enjoy at room temperature or add to convection oven to heat up if you want to enjoy warm.

 

Storing:

I like to store mine in an airtight container in the refrigerator. But these also freeze nicely, so if you don’t plan on eating them all at once just freeze for another day.

No Sugar Added Strawberry Banana Bars

Makes 9 large bars

Ingredients

  • 4 eggs
  • 1 1/2 ripe bananas
  • 1/4 cup coconut oil melted
  • 1/4 cup coconut milk
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup tapioca flour
  • Pinch of salt
  • 1 tsp baking soda
  • 1/2 cup coconut shreds
  • 1 cup chopped strawberries + 4-6 strawberries for topping
  • 1-2 tbsp raw coconut butter + 1 tsp coconut oil

Instructions

  • Mix wet ingredients
  • Add in dry ingredients and mix
  • Fold in chopped strawberries and raw coconut shreds
  • Add to a lined 8x8 baking dish
  • Top with strawberry slices
  • Bake 350 F 25-30 minutes or until a toothpick comes out clean
  • Melt your coconut butter and coconut oil
  • Drizzle on top
  • Store in refrigerator
