Lemon Macadamia Nut Bliss Balls:

Take me to the tropics with these lemon macadamia nut bliss balls. If you all have been following me for awhile now, you all know how much I love making a batch of my bliss balls. These little bites of heaven are the perfect pre workout snack, snack throughout the day, and a nice after dinner treat.

Ingredients you will need:

  1. Raw macadamia nuts
  2. Coconut oil
  3. Unsweetened coconut shreds
  4. Medjool dates
  5. Vanilla extract
  6. Juice of a lemon
  7. Cinnamon
  8. Filtered water

How to make:

Making bliss balls is simple! I add all the ingredients to my food processor and process for about 30 seconds. Personally I like to soak my nuts and medjool dates prior to making, but this step is totally optional. I find that soaking not only helps process it easier but it helps with the texture of the bliss balls.

Fixing batter consistency:

Something to note when making bliss balls is that the flavors and texture can always be adjusted as you go. If the batter turns out too crumble and is not easily able to roll into balls I like to add 1 tbsp at a time of filtered water, and process. And i’ll repeat this step until I reach my desired consistency. But if the batter turns out to be too wet, I’ll try adding in some more nuts or coconut shreds, or I stick the batter in the refrigerator to firm up.

Storing:

Once you have the batter all set, roll them into 16 bite size balls, and store in an airtight container either in the refrigerator or freezer. If storing them in the freezer, let them sit at room temperature for a minute or so before biting into it.

Makes 16 bite size balls

Ingredients

  • 1 cup raw macadamia nuts
  • 2 Tbsp coconut oil
  • 1 cup unsweetened coconut shreds
  • 4-6 medjool dates
  • 1 tsp vanilla extract
  • 1 lemon juiced
  • 1 tsp cinnamon
  • ***If batter is too dry add 1-2 Tbsp filtered water one at a time until you reach desired consistency

Instructions

  • Add all except filtered water to food processor and process for 30 seconds
  • Batter should be easily able to roll Into balls
  • If too crumbly add one Tbsp of filtered water at a time
  • Store in refrigerator or freezer in an airtight container
