Green bean casserole:
I wanted to create my own spin to the classic green bean casserole. And I must say, this version taste so fresh it is my new favorite version to prep for the holidays. And it is gluten-free, dairy-free, and vegan in case you are wondering.
Ingredients you will need:
- Vegan butter or any oil of your choice
- Onions
- Mushrooms
- Salt and pepper to taste
- Dried thyme
- Garlic
- Coconut cream or any type of dairy-free mylk you use. But if you don’t like coconut I recommend vegetable broth or chicken bone broth as a substitute
- Water
- Tapioca flour (substitute arrowroot, cornstarch, or any flour you have)
- Frozen or fresh green beans
- Cumin
- Paprika
- Garlic avocado oil
How to prepare the cream of mushroom sauce:
To a large pan, add oil or butter, and warm on medium heat. And add diced onions, diced mushrooms, salt and pepper to taste, and sauté for 5-7 minutes. Next add minced garlic, dried thyme, and cook until fragrant, about 1-2 minutes. And then add the coconut cream, water, tapioca flour, and mix. But make sure to stir frequently so it doesn’t burn. And cook on medium low heat until it turns into a thick gravy like consistency.
Blanching the green beans:
While the cream of mushroom is cooking, bring a pot with salted water to a boil. Add in the green beans, and cook 2-3 minutes. And then transfer to an ice bath to stop them from cooking.
Air fried onions:
I prepared my onions in my air fryer. I promise, these are super easy to make. And you’ll never want to buy store bought ones again after trying these. But if you are pressed for time or don’t feel like making them, just pick up a box at the grocery store. Simply slice your onions, add garlic avocado oil spray, cumin, paprika, salt and pepper to taste, and tapioca flour, mix, add to air fryer, and cook 380 for 20 minutes, shaking half way through.
Putting the casserole together:
Once everything is done, add the blanched green beans to a 13×9 baking dish, add the cream of mushroom sauce, and mix it all up. And top with your homemade air fried onions, cover, and bake 350 F for 20-25 minutes, removing the cover the last 5 minutes.
Prep ahead meal:
This is a great option for prepping ahead of time if you are looking to save some time. I like to prepare everything the night before and store in the refrigerator. But I keep the air fried onions off and I store in an airtight container at room temperature to keep them crispy. And the day of, I will top with my air fried onions, and bake.

- 4 garlic cloves minced
- 3/4 cup coconut cream substitute: dairy-free mylk, vegetable broth, for chicken bone broth
- 1/4 cup water
- 1/2 cup tapioca flour substitute arrowroot, cornstarch, or flour you use
- 3 cups fresh or frozen green beans
Air fried onions ingredients:
- 1 small yellow onion
- Garlic Avocado oil spray
- 1/2 tsp cumin
- 1/2 tsp paprika
- 2 Tbsp tapioca flour substitute any type of flour
- Salt and pepper to taste
Instructions
Green bean casserole Instructions:
- Add oil to a large pan and warm on medium heat
- Add onions, mushrooms, salt and pepper, and sauté for 5-7 minutes on medium heat
- Add in minced garlic, thyme, mix, and good until fragrant (about 1-2 minutes) on medium heat
- Add coconut cream, water, and tapioca flour, and mix, cook on medium low heat until it thickens up, stirring throughout
- Blanch frozen green beans by adding to boiling salted water for a few minutes and placing in an ice bath once done
- Remove green beans with a slotted spoon and add to a 13x9 baking dish
- Add in the mushroom cream sauce and mix
- Top with air fried onions
- Bake covered 350 F for 20-25 minutes, last 5 minutes remove cover
Air fried onions instructions:
- Slice your onions
- Spray with garlic avocado oil, add seasonings, flour, and mix
- Add to air fryer
- Cook 380 for 20 minutes shaking half way through
- If baking, bake 400 F for 20 minutes, shaking half way through, making sure to keep an eye on them so they don’t burn
