Grain-Free Tahini Blondies:
I have been in a serious tahini MOOD and these tahini blondies make me do my happy dance. They have a cake like consistency and extra gooey in the middle, just how I like them. Valentines day is tomorrow so whip up your loved one a batch and call it a day.
Ingredients you will need:
- Tahini (feel free to use any nut or seed butter)
- Pasture raised eggs
- Vanilla extract
- Almond flour
- Maple sugar (substitute coconut sugar or any type of sugar you prefer)
- Coconut oil
- Baking soda
- Salt
- Cinnamon
- I used Unreal dark Chocolate peanut gems because that is what I had in the pantry (but feel free to use whatever chocolate you prefer)
How to prepare:
I add my wet ingredients to a medium sized bowl and with a hand held mixer I mix until incorporated. Next, I add in the dry ingredients and mix until all is combined. Then fold in the chocolate peanut gems, add to a lined 8×8 baking dish, and top with more chocolate for good measures. I baked mine 350 F for 18 minutes because I like mine gooey in the middle.
Storing:
I store mine in an airtight container in the refrigerator. And when I am in the mood for one I reheat in my convection oven for a few minutes. But you can also freeze these once cooled in an airtight container, if not planning on eating the whole batch.
