Grain-Free Date Bread:

I was in the mood for a loaded bread, so I created this snacking grain-free date bread for the week. The cinnamon and nutmeg adds so much flavor, I feel that it doesn’t really need any extra sweetness. But if you want it a little sweeter feel free to add in some maple syrup.

Ingredients you will need:

  1. Almond flour
  2. Coconut flour
  3. Baking soda
  4. Sea salt
  5. Soaked Medjool dates
  6. Pasture raised eggs
  7. Coconut oil
  8. Apple cider vinegar
  9. Cinnamon
  10. Nutmeg
  11. Almond milk
  12. Vanilla extract
  13. Optional: Raisins and crushed pecans (feel free to add any dried fruit or nuts/seeds to yours)
  14. Optional if you want it sweeter: 1/4 cup maple syrup

Please note: For this recipe I have not tried any substitute and I am sorry if you all have any questions about substitutes. But if you try variations I would love to hear from you.

How to prepare:

I first soak my medjool dates in warm water for at least 30 minutes. And once done soaking, I drain the water, add my soaked dates to my food processor, and process until I get a sauce like consistency. Next, I add all the wet ingredients to a medium size bowl and mix with a handheld mixer. And then I add the dry ingredients and mix.

Bake:

Add the batter to a lined loaf pan ( 1 lb. pan: 8″ x 4 1/2) and bake 350 F for 35-40 minutes or until a toothpick comes out clean. And if the top starts to brown quickly, just cover with some foil, and continue to cook. Once done I let it cool completely before slicing.

How to store:

I like to pre slice my loaf and add to an airtight container, and store in the refrigerator. But if you don’t plan on eating the whole loaf, it also freezes well. I individually wrap my slices, store in the freezer, and when I am in the mood for a slice, I reheat in my convection oven for a few minutes.

  • 3 large pasture raised eggs
  • 1/4 cup coconut oil melted
  • 2 tsp vanilla extract
  • 1/4 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup raisins
  • 1/2 cup crushed pecans

Instructions

  • Soak dates with warm water for at least 30 minutes
  • Drain water from dates and process in food processor with 2-3 tbsp filtered water
  • Mix wet Ingredients
  • Add in dry ingredients and mix
  • Fold in raisins and chopped pecans
  • Add to a lined loaf pan and bake 350 F 35-40 minutes or until a toothpick comes out clean
  • Let cool before slicing
  • Store in refrigerator
