Grain-Free Apple Pie Muffins:

I have a bunch of apples from apple picking, so these grain-free apple pie muffins went down for meal prep this week. These muffins are easy to prepare, grain-free, gluten-free, and refined sugar free. And I can’t wait for you all to try them out!

Ingredients you will need for muffins:

  1. Diced apples
  2. Apple sauce
  3. Almond flour
  4. Coconut flour
  5. Vanilla Extract
  6. Vanilla Madagascar ghee (substitute coconut oil or butter)
  7. Organic pasture raised eggs
  8. Cinnamon
  9. Apple pie seasoning
  10. Baking powder
  11. Baking soda
  12. Coconut sugar (sub any sugar you prefer)

Ingredients you will need for crumble:

  1. Raw pecans
  2. Raw pistachios
  3. Vanilla Madagascar ghee (substitute coconut oil)
  4. Coconut sugar
  5. Apple pie seasoning
  6. Almond flour

Can I substitute ingredients?

Feel free to substitute the coconut sugar with whatever sugar you typically use. If you don’t have ghee you can substitute with coconut oil or butter. For this recipe I have not tried substitutes for the flours since I typically stick to using almond flour and coconut flour when it comes to my gluten-free and grain-free baking flours.

How to prepare the muffins:

For the muffins, you are going to all the wet ingredients to a bowl, and with a handheld mixer, mix until all ingredients are incorporated. Then add in the dry ingredients, mix until combined, and then fold in diced apples. Add muffin liners to a muffin tin and add about 1/4 cup of the muffin batter to the muffin tins, and set aside while you prepare the crumble topping.

Preparing the crumble:

When preparing the crumble you are going to add all the ingredients to a food processor and pulse a couple times until you reach a crumbly, sand like consistency. Be sure to pulse and not process when using your food processor, because if you process you will end up with a nut butter versus a crumble.

Once you have your crumble, add to the top of your muffins, and bake 350 F for 20-25 minutes or until a toothpick comes out clean.

Additional topping to muffins:

Once your muffins are done baking, let cool for 5 minutes, and then drizzle some raw coconut butter on top.

How to store muffins:

I like to store my muffins in an airtight container in the refrigerator. And when I want to enjoy one I place in my convection oven and reheat for 5 minutes.

Grain-Free Apple pie muffins

  • 1 1/2 cups Applesauce
  • 3 large organic pasture raised eggs
  • 1/3 cup vanilla Madagascar ghee substitute coconut oil or butter
  • 1/2 cup coconut sugar substitute any sugar you use
  • 1 tsp vanilla extract
  • 1 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 Tbsp Apple pie spice
  • 1 cup diced apple

For crumble:

  • 1/3 cup raw Pecans
  • 1/3 cup raw pistachios
  • 1/4 cup Vanilla Madagascar ghee substitute coconut oil
  • 1/4 cup coconut sugar substitute any sugar you prefer
  • 1/2 tsp Apple pie spice
  • 1/4 cup almond flour

Instructions

Muffins

  • Mix wet Ingredients with a handheld mixer
  • Add in dry ingredients and mix
  • Fold in diced apples
  • Add about 1/4 cup of batter to lined muffin tins

Crumble

  • Add all ingredients to food processor and pulse a few times until you get a  sand like consistency
  • Top muffins with crumble
  • Bake 350 F for 20-25 minutes or until a toothpick comes out clean
