Grain-Free Apple Crisp:

A grain-free, refined sugar free, gluten free, apple crisp had to happen after apple picking a bunch of apples. We went to Oak Glen, California to apple pick a few weeks back and one of the items I had on my list to bake  was my apple crisp. This crisp is super easy to prepare and what I like about this recipe is that it is one you can make year round. Because you can swap out the filling with whatever is in season.

Ingredients you will need:

  1. Apples
  2. Tapioca flour (you can use arrowroot or cornstarch this is used as a thickener)
  3. Coconut sugar
  4. Vanilla Madagascar ghee (substitute conclut oil)
  5. Vanilla extract
  6. Cinnamon
  7. Cardamom
  8. Nutmeg
  9. Raw pecans
  10. Almond flour
  11. Salt

Preparing the apple filling:

I use a large pan and first heat my ghee. But if you don’t have the ghee feel free to use coconut oil. I then add all the ingredients for my apple filling and sauté apples for 5-7 minutes stirring throughout. Once done I add it to a greased 8×8 baking dish and prepare the topping.

Making the topping:

Add all the ingredients for the topping to a food processor and pulse a few times. You want the texture to be sticky and resemble a sand like consistency. And once you have the desired texture add the topping to the apple filling.

Baking the crisp:

You are going to add your crisp to a preheated oven at 350 F. I cooked mine covered for 25 minutes and then uncovered for an additional 10 minutes. I didn’t want my pecans to burn and that is why I covered the first part of the baking. And once done top with some dairy-free gelato and enjoy!

Ingredients

Filling

  • 5-6 apples sliced
  • 1 Tbsp vanilla Madagascar ghee sub coconut oil
  • 3 tbsp coconut sugar
  • 1 Tbsp tapioca flour
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cardamom

Topping:

  • 1 cup raw pecans
  • 1/4 cup coconut sugar
  • 1/4 cup almond flour
  • 1/4 cup vanilla Madagascar ghee sub coconut oil
  • Pinch sea salt
  • 1 tsp vanilla extract

Instructions

  • Heat vanilla ghee in a large pan
  • Add all ingredients for filling to pan and cook for 5-7 minutes, stirring throughout
  • Add filling to a greased 8x8 baking dish
  • Add all ingredients for topping to food processor and pulse a couple times you want it to look like thick sand consistency
  • Top filling with the topping
  • Add to preheated 350 F oven and cook covered for 25 minutes and then uncovered for 10-15 minutes
