GF brown butter air fried cowboy cookies:

I am about to blow your mind, with these gluten free brown butter air fried cowboy cookies. And yes, I said air fried cookies. These are a great option for when you want home baked goodies but don’t want to spend hours baking. Because theses cookies only take 5-6 minutes to bake.

What are cowboy cookies?

Cowboy cookies are basically a loaded cookie dough filled with all the delicious add ins. Such as, chopped pecans, toasted coconut chips, chocolate chips, and oats.

Ingredients you will need:

  1. Gluten free flour ( I used this one)
  2. Butter
  3. Baking soda
  4. Maple sugar
  5. Brown sugar
  6. Salt
  7. Vanilla extract
  8. Egg
  9. Chocolate chips
  10. Toasted coconut chips or regular coconut shreds
  11. Pecans
  12. Gluten free oats

What if I don’t have maple sugar?

I personally love maple sugar, if you haven’t tried it, I highly suggest. But if you don’t have it, don’t worry! Feel free to substitute any type of sugar you prefer using.

Can I make these without eggs?

You can use a flax or chia egg in place of the egg. 1 tsp chia seeds or flaxseed meal and 1 Tbsp of water.

How to prepare brown butter:

Browning butter is pretty quick! Add your stick of butter to a small sauce pan on a medium heat. And begin to whisk to break up the butter. Once the butter melts, the butter will begin to foam and sizzle. And keep stirring for about 5-8 minutes. But keep an eye on it so it doesn’t burn. Once you get a slightly golden brown color, remove from the heat, and the foam will slowly subside. Let the butter cool before adding to the wet ingredients.

Preparing the cookie dough:

Mix your dry ingredients in a medium bowl. And in a small bowl mix the wet ingredients once the brown butter has cooled. Add the wet ingredients to the dry ingredients, and mix. Fold in the chopped pecans, toasted coconut chips, chocolate chips, oats, and mix. And refrigerate the dough for at least 30 minutes.

Baking in air fryer:

Using an ice cream scoop, scoop batter, and add to a greased air fryer dish. And bake 330°f for 5-6 minutes. These cookies don’t spread too much so you could add about 6-8 cookies, depending on the size of your air fryer.

Once done baking:

And once the cookies are done baking, let rest for 10 minutes before devouring.

Can I bake these in the oven if I don’t have an air fryer?

Yes, you can totally bake these cookies in the oven. Preheat oven to 350°F and bake 10-12 minutes. And let rest for 10 minutes before enjoying.

Can I prep the cookie dough in advance?

This cookie dough is great for prepping in advance. I like to prep a batch on Sunday and keep stored in my refrigerator or freezer. And when I am in the mood for dessert, I just scoop out some dough, and bake.

Gluten Free Brown Butter Air Fried Cowboy Cookies:

Makes 18 small cookies

Ingredients

Ingredients:

  • 1 large egg
  • 1 tsp vanilla extract
  • 1 stick grass fed butter
  • 1 1/2 cup gluten free flour I used King Arthur Gluten Free 1:1 measure flour
  • 1 tsp baking soda
  • 1/4 cup brown sugar
  • 1/2 cup maple sugar Substitute coconut sugar or any type of sugar you usu

Add ins:

  • 1/2 cup chocolate chips
  • 1/2 cup toasted coconut chips chopped can use regular shredded coconut and toast yourself for a few minutes in oven
  • 1/2 cup chopped pecans Substitute any nut or seeds you prefer
  • 1/3 cup gluten free oats Substitute any oats you use

Instructions

Brown Butter Instructions:

  • Prepare your brown butter by adding the stick of butter to a small pot on medium heat
  • Cook for 5-8 minutes stirring throughout. It willl sizzle and foam up, but keep mixing until it turns a golden brown color. But be sure to keep an eye on it because you don’t want it to burn
  • Remove brown butter from heat and let cool, the foam will subside slowly

Cookie Dough Instructions:

  • Mix dry ingredients in a medium bowl
  • Once brown butter has cooled, add to a small bowl with the rest of the wet ingredients and mix
  • Fold in the chopped pecans, chopped toasted coconut chips, oats, and chocolate chips, and mix until incorporated
  • Refrigerate the cookie dough for 30 minutes or overnight

Air Fryer Baking Instructions:

  • Use a Tbsp ice cream scoop and scoop out dough
  • Add cookie dough to a greased air fryer pan and cook 300°F for 5-6 minutes
  • Once done carefully remove from pan and let rest for 10 minutes before enjoying

Oven Baking Instructions

  • Use a Tbsp ice cream scoop and scoop out dough
  • Add to a lined baking sheet
  • Bake 350°F for 10-12 minutes
  • Let rest for 10 minutes before enjoying
