Tahini Oatmeal Chocolate Chip Cookies:

These tahini oatmeal chocolate chip cookies are going to be the perfect quarantine treat. These cookies are gluten-free, dairy-free, refined sugar-free, egg-free, and vegan. And the nice thing about these cookies is that they can be meal prepped ahead of time and frozen if you want to save some for another day.

Ingredients you will need:

These are the ingredients I used based off what I had in my pantry. But feel free to use what you have in your pantry.

  1. Maple syrup
  2. Tahini
  3. Flaxseed meal
  4. Filtered water
  5. Vanilla
  6. Cinnamon
  7. Salt
  8. Sprouted gluten-free oats
  9. Almond flour
  10. Evolved cashew cookie dough chocolate bar (substitute any type of chocolate you have on hand)

How to prepare dough:

Preparing the dough is easy. First, I prepared my flax “eggs,” by mixing the flaxseed meal with the filtered water, and letting it sit for 10 minutes. And once the flax “eggs” have a gel like consistency, I added to a bowl along with tahini, maple syrup, vanilla extract, and mix. Next, add in the oats, salt, almond flour, and mix. Fold in the chopped cashew cookie dough bar, mix, and refrigerate dough for 30 minutes.

Baking cookies:

I used a tbsp ice cream scoop to scoop out chilled dough, and added to a lined baking sheet. Gently flatten cookies with the palm of your hand and chop with more chopped chocolate on top. And bake 350 F for 9-11 minutes. And once they are done baking sprinkle some flaky sea salt on top and enjoy!

Storing cookies:

I prefer storing mine in an airtight container in the refrigerator. But if you don’t plan on eating them all at once, I would suggest freezing for another day. And if you freeze, all you have to do is let sit at room temperature, or reheat in convection oven.

Makes 15 small cookies

Ingredients

  • 1/2 cup maple syrup
  • 1/2 cup tahini
  • 2 Tbsp flaxseed meal
  • 6 Tbsp filtered water
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • Pinch of salt
  • 1 cup oats
  • 1/4 cup almond flour
  • 1 bar of evolved cashew cookie dough chocolate bar + couple square for on top

Instructions

  • Prepare flax eggs by adding the flaxseed meal and water to a small bowl and let sit for 15 minutes or until it turns into a gel like consistency
  • Mix wet ingredients
  • Add dry ingredients and mix
  • Refrigerate dough for 30 minutes
  • Use a Tbsp ice cream scoop and add dough to a lined baking sheet
  • Gently flatten with hands and top with chopped chocolate
  • Bake 350 F for 9-11 minutes
