Fig + banana white chocolate chip muffins:
Muffins are one of my staples for meal prepping a yummy breakfast on the go. Because they are super easy to prepare, the flavor combinations are endless, and it makes your mornings much easier. These fig and banana white chocolate chip muffins are super tasty with just the right amount of sweetness from the bananas, figs, and white chocolate chips.
What you will need:
- Fresh figs (dried figs should work too)
- Ripe bananas
- Eggs
- Coconut oil
- Almond flour
- Flaxseed meal (optional)
- Maple syrup
- Baking soda and baking powder
- Cinnamon, nutmeg, and cardamom
- White chocolate chips
How to make the muffins:
The steps to making these muffins are simple. First add all your wet ingredients to a large bowl and either in a blender or with a handheld mixer, mix. Then add in your dry ingredients and mix. And then you are going to fold in the fresh chopped figs, white chocolate chips, and mix. Line your muffin tins with muffin liners, add about 1/4 cup of batter to each one, and top with more chocolate chips and figs. Bake 350 F for 25-28 minutes or until a toothpick comes out clean.
Freeze for another day:
I usually am the only one in my household who eats these and because of that I have to freeze half the batch. These muffins do freeze well and are convenient for those days you don’t have anything prepared. You can simply pull one out of the freezer, defrost, and reheat in the toaster oven for a few minutes.

Ingredients
- 2 ripe bananas
- 3 eggs
- 1 cup chopped figs
- 1/4 cup coconut oil semi melted
- 2 1/2 cups almond flour
- 2 Tbsp flaxseed meal
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cardamom
- Optional add in: 1/2 cup white chocolate chips
Instructions
- Blend everything in blender (except figs and chocolate chips)
- Fold in figs and white chocolate chips
- Add 1/4 cup to muffin tin,top with more fresh figs and white chocolate chips
- Bake 350 for 25-28 minutes or until a toothpick comes out clean.
