This fall harvest salad is one of my favorites to prepare for any get togethers. It can be meal prepped ahead of time, so the day of you are not swamped trying to prepare your dish. For this salad I loved using Lacinato kale because I find it to be tastier than the others. The trick to having a good kale salad is massaging your kale. Yup you heard me right, give your kale some TLC and it will be the best tasting salad you’ve ever had.

You are probably wondering why the need to massage it? Well here are some of the reason I like to massage my kale:

  1. It cuts out the bitter taste the kale usually has and softens up the texture of it
  2. It has helped me digest it better
  3. I just think it gives the salad a better flavor

Now how do you massage the kale you are probably wondering? By adding in some lemon juice, celtic sea-salt, olive oil, and start crunching them between your hands. You will see the kale turn into a darker green color and start to wilt once you start massaging. If you are going to be adding a oil based of vinegar based salad dressing and letting it sit overnight, you won’t necessarily need to massage your kale. It just depends on how you are going to prepare your salad.

For this salad I went with using sliced apples, crushed pecans, hemp seeds for some extra protein, and a maple tahini dressing to be drizzled on top.

The dressing is super minimal and easy to prepare. Mix your melted tahini, juice of a lemon, maple syrup in a small bowl, and set aside. I like to serve mine on the side because I know not everyone loves dressings, so they can make the choice whether or not they want dressing on their salad.

Fall harvest salad

Ingredients

  • 1 head of lacinato kale chopped
  • 1 Tbsp avocado oil
  • Pinch of Celtic sea salt
  • 1 Apple
  • 2 Tbsp hemp seeds
  • 1 Tbsp crushed pecans

Instructions

  • Massage kale with your hands for a couple minutes. Top with apples, pecans, hemp seeds.

Maple tahini dressing

  • 1/4 cup @artisanaorganics tahini
  • 1 lemon juiced
  • 1 Tbsp maple syrup
  • Mix and store in fridge in an airtight container.
