Buffalo Burger Salad Bowls

Lunches on the go:

When it comes to meal prepping lunches for on the go, salads are usually my go to meals. Because they are easy to prepare, you can switch up the items added to the salads, and are easy to enjoy on the go. One of my favorites to meal prep are these burger salad bowls.

To make your burgers:

These buffalo burgers are super easy to prepare. To cut time on chopping everything, I add all the vegetables to my food processor and pulse a couple times. If you are doing this method, be sure to PULSE and not PROCESS. If you process the vegetables you are going to end up with mush! Once you have your vegetables chopped, heat a pan with the ghee, and sauté your vegetables for a few minutes. Let the vegetables cool and then add to your ground buffalo along with seasoning, mix, and form into patties. Add to a grill pan with ghee and cook for a few minutes on each side.

How to load up your burger bowl:

  1. Decide on what type of protein you will be using (ground chicken, ground turkey, ground buffalo, legumes, tempeh, tofu)
  2. Choose your greens (spinach, spring mix, kale, butter lettuce, romaine lettuce)
  3. Pick your vegetables (cucumbers, roasted broccoli, carrots, zucchini)
  4. Load up your bowl with healthy fats (avocado,  homemade beet hummus, olives, hemp seeds, olive oil, avocado oil)
  5. Pick your complex carb (sweet potato fries, regular fries, plantains)

 

Buffalo Burgers

Makes 12 medium size patties

Ingredients

  • 1 lb ground buffalo
  • 2 red bell peppers
  • 1 jalapeno deseeded
  • 1/2 onion
  • 2 handfuls of cilantro
  • Optional: 1/4 cup feta cheese OMIT IF DOING WHOLE30
  • salt and pepper to taste
  • 1/2 Tbsp California garlic ghee + 1/2 Tbsp for grilling
  • 1 Tbsp Primal Palate Super Gyro seasoning

Instructions

  • Add your veggies to a food processor and pulse a couple times to chop (or hand chop it all)
  • Add to a pan with some ghee and sauté for a few minutes with salt + pepper
  • Let veggies cool
  • In a large bowl mix the buffalo, feta cheese, and super gyro seasoning
  • Add veggie mixture, mix, and form into patties
  • Add to a grill pan with additional ghee and cook a few minutes each side
