Bacon mushroom frittata

Ingredients

  • 6 @vitalfarms pasture raised eggs
  • 4 slices @pedersonsfarms sugar free bacon
  • 1 cup diced mushrooms
  • 1 cup diced zucchini
  • 1/3 cup diced onions
  • 1 Tbsp @fourthandheart California garlic ghee
  • Salt + pepper to taste
  • 1-2 handfuls @organicgirl greens

Instructions

  • Sauté your onions with ghee for a few minutes. Add in mushrooms, zucchini, salt + pepper, and cook for 5-7 minutes. Add greens and cook until wilted. Let cool and add to whisked eggs. Add to a 8x8 baking dish and cook 350 for 30 minutes.
