I love a good meatball! I don’t think I go a week without meal prepping some form of meatballs for the week. I just find that they go so well with a variety of dishes that it always makes leftovers fun and exciting. I typically will either pan fry my meatballs or bake, but this time I wanted to switch it up, and so I made them in my air fryer.

If you don’t know this about me, I love kitchen gadgets, and my air fryer is one that I can’t get enough of. The way the air fryer works, is it cooks the food by circulating hot air around the food. It leaves your food nice as crispy as if you fried without dipping it in oil, like you would typically fry food.

I decided to stuff my meatballs with some pepper jack to make them EXTRA and boy were they BOMB. The recipe is simple, just add your ground bison to a bowl, add the seasonings, along with some chopped cooked bacon (I undercooked my bacon since it would continue to cook in air fryer). Mix with your hands, form into balls, and stuff each meatball with a chunk of pepper jack cheese. Add to your sprayed air fryer dish, set to 370 on your air fryer, and cook 12-15 minutes.

One of the dishes that I made using these meatballs was this simple instant pot cauliflower mash, roasted asparagus, and the air fried meatballs. The perfect weeknight dinner that can be prepped in just 15 minutes. Don’t want to do any cooking during the week? Make sure to meal prep everything on Sunday and just simple reheat everything in your convection oven for 5-10 minutes night of.

Air fried pepper jack bison meatballs

Makes 10


Air fried pepper jack bison meatballs

  • 1 lb ground bison
  • 10 Pepper jack cheese chunks
  • 2 Tbsp primal palate amore seasoning
  • 2 tsp minced garlic
  • 1 tsp turmeric
  • 1/2 tsp coriander
  • Salt + pepper
  • 4 pieces diced cooked bacon

Instant pot cauliflower mashed “potatoes”

  • 1 large head of cauliflower chopped
  • 1 tbsp California garlic ghee
  • Salt + pepper to taste
  • 1 cup water


Air fried pepper jack bison meatballs

  • Cook your bacon
  • Add rest of ingredients (except cheese) to a bowl and mix with your hands
  • Form into meatballs
  • Press in the cheese chunks in the middle of the meatballs
  • Add to greased air fryer and cook 370 for 15 minutes

Instant pot cauliflower mashed “potatoes”

  • Add 1 cup water to pot, add trivet, place chopped cauliflower on top
  • Close instant pot, seal valve, set to steam high pressure for 3 minutes
  • Once done quick release of pressure
  • Remove trivet from pot, add ghee, and with an immersion blender, blend the cauliflower
  • Add salt + pepper to taste
