Mexican Fruit Salad:
Growing up this Mexican fruit salad was a staple in our household. It was something my mom would always make us for an after school snack and I seriously couldn’t get enough of it. Especially during the summertime months this fruit salad is something my body always craves.
Ingredients you will need:
- Watermelon
 - Pineapple
 - Orange
 - Lemons
 - Tajin or Tapatio seasoning (there is also a chili seasoning from Trader Joes you can use)
 - Jicama
 - Persian cucumbers
 
How to prepare:
What I love about this salad is that you really don’t have to measure anything. But for an idea as far as serving size goes I added the recipe to serve about 1-2 people.
Meal prep:
I like to pre chop everything on Sunday and place in individual Tupperwares. And during the week it makes it much easier to just throw everything in a bowl and enjoy my snack in no time.
Mexican Fruit Salad:
Serves 2
Ingredients
- 1/3 cup chopped watermelon
 - 1/3 cup chopped jicama
 - 1/3 cup chopped pineapple
 - 2-3 Persian cucumbers
 - 1 Orange
 - 3 lemons juice or until fruit and vegetables are coated
 - 1/2 Tbsp Tajin or Tapatio seasoning add more if you like it spicer
 
Instructions
- Add chopped fruit and vegetables to a bowl
 - Squeeze the lemon juice all over until fruit and vegetables are coated
 - Sprinkle in seasoning and adjust spiciness depending on your taste and mix
 - Chill in refrigerator for at least 30 minutes if the fruit was not pre chopped and chilling in refrigerator already.
