Whole30 Pumpkin pie chia and hemp seed pudding:

Pumpkin pie chia and hemp seed pudding is one of my favorite breakfast to meal prep for on-the-go. And these are Whol30 compliant, so if any of you currently doing a September Whole30 I hope you try these out. They are grain-free, gluten-free, dairy-free, and loaded with some Vital Proteins Unfalvored Collagen Peptides for an extra boost of protein.

What is collagen?

Collagen is what helps give us structure to our skin, hair, bones, ligaments. And as we age our collagen in our bodies tend to decline. And that is why everyday I add some form of collagen into my meals or drinks.

What can I add collagen to?

I like to add collagen to my coffee, smoothies, blissballs, overnight oats, and chia + hemp seed pudding.

What are my favorite Whole30 compliant Vital proteins products?

My favorite Whole30 compliant products include;  their Mocha coffee creamer I like to add in my coffee, unflavored collagen peptides I put in my blissballs or overnight oats, chia +hemp seed pudding, Matcha, and their collagen waters when I want something other than just water.

Ingredients you will need for chia + hemp pudding:

  1. Pumpkin puree
  2. Hemp seeds
  3. Chia seeds
  4. Pumpkin spice
  5. Coconut milk
  6. Filtered water
  7. Vital Proteins Unflavored Collagen Peptides
  8. Cinnamon
  9. Cardamom
  10. Coconut shreds (unsweetened)
  11. 1/2 ripe banana
  12. Coconut cream
  13. Vanilla extract
  14. Homemade sugar free nut/seed butter

Steps for making pudding:

Throw your coconut milk, chia seeds, hemp seeds, pumpkin spice, pumpkin puree, filtered water, collagen peptides, cinnamon, cardamom, and coconut shreds to a blender and blend on low. If you have not tried blending your chia + hemp seed pudding, you all are missing out. Because the texture that you get from blending it all up is way better then just mixing with a spoon.

Making coconut cream “frosting”:

Once your pudding is done, prepare your coconut cream topping. In a small bowl add the coconut cream, coconut milk, 1/2 ripe banana, vanilla extract, and cinnamon. Then with a handheld mixer, mix for about 2-3 minutes or until it turns nice and fluffy.

Layering fun:

Now comes the fun part, the layering of the chia + hemp seed puddings. I use Weck Jar mason jars for these because they are perfect for on-the-go. I start by adding a layer of my homemade nut/seed butter, then the pumpkin chia + hemp seed, and top with the coconut cream “frosting.” I sprinkle cinnamon on top and for garnish a cinnamon stick, but that’s just for looks.

Ingredients

Pumpkin Pie Chia and Hemp Seed Pudding

  • 1 cup coconut milk
  • 1/3 cup pumpkin puree
  • 1/3 cup filtered water
  • 1/4 cup chia seeds
  • 1/4 cup hemp seeds
  • 2 scoops @vitalproteins unflavored collagen peptides
  • 1/2 cup unsweetened coconut shreds
  • 1/2 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom

Coconut cream frosting

  • 1/2 ripe banana
  • 1 tsp vanilla extract
  • 1/4 cup coconut cream
  • 1 tbsp coconut milk
  • 1/2 tsp cinnamon

Instructions

Pumpkin Pie Chia and Hemp Seed Pudding

  • Add everything to blender and blend

Coconut cream frosting

  • With a hand held mixer, mix until fluffy (about 1-2 minutes)
