Chia + Hemp Seed Pudding:

I love meal prepping a batch of chia and hemp seed puddings for an easy breakfast on-the-go option. And I know things have changed over the last few months and working from home has become my new normal. But having meals already prepped ahead of time saves me so much time during my busy work weeks.

Flavor combinations:

Something that I love about chia + hemp seed puddings is the flavor combinations are endless. This week I decided to go with a vanilla macadamia flavor since I had just prepped a fresh batch of macadamia mylk in my Almond Cow.

Ingredients:

  1. Homemade macadamia mylk or any type of mylk you use
  2. Chia seeds
  3. Hemp seeds
  4. Flaxseed meal
  5. Vanilla extract
  6. Cinnamon
  7. Optional if you want a sweeter chia pudding: maple syrup

How to prepare:

I personally love blending all the ingredients in my high powered blender. The consistency is just so much better I find when blended up. But you could also just throw everything in a bowl and let sit in the refrigerator overnight if that is your jam.

Storing:

Once I blend up my pudding, I divide the pudding amongst three mason jars. And I store in the refrigerator overnight. And in the morning I add my toppings and enjoy.

Toppings:

The possibilities are endless as far as what type of toppings you want to add to your chia puddings. I stuck with the classic fruit and nut/seed butter combo. And since 4th of July is around the corner I got extra festive with strawberries, blueberries, and unsweetened coconut chips.

 

Vanilla Macadamia Chia + Hemp Seed Pudding

Serves 3

Ingredients

  • 1- 1 1/2 cups homemade macadamia nut mylk or any type of mylk you use
  • 1/4 cup chia seeds
  • 1/4 cup hemp seeds
  • 1/4 cup flaxseed meal
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Optional if you want it sweeter: 2-3 Tbsp maple syrup

Instructions:

  • Add everything to a high powered blender and blend up
  • Pour into 3 mason jars and store in refrigerator overnight
  • In morning top with chopped strawberries blueberries, unsweetened coconut chips, and nut/seed butter of choice

Macadamia mylk:

  • 1 cup macadamia nuts
  • 2 medjool dates
  • 1 tsp sea salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 5 cups filtered water

Instructions

  • Blend it all up and strain with a mesh bag
