Stuffed Butternut Squash:

When it comes to enjoying some plant based meals at home I make sure to load mine up with lots of plant based protein to keep me full and satiated. That means including some sort of beans and quinoa always if enjoying a plant based meal. Like I have said before I don’t label the way I eat, I just focus on giving my body real food.

Ingredients you will need:

For this fall harvest stuffed butternut squash boats you are going to need the following:

  1. roasted butternut squash that you cut in half and remove the seeds
  2. Dried cranberries with 0 sugar added ( I use this one)
  3. Cooked quinoa
  4. Chickpeas
  5. Pumpkin seeds
  6. Spinach
  7. Seasonings such as: curry, turmeric, coriander, cumin, cinnamon, salt + pepper

How to prepare Butternut Squash:

First things first, you want to roast your butternut squash. I personally don’t add anything to it because I think it has enough flavor on it’s on. You will bake 425 F for 30 minutes. Once done let it cool and then make slits throughout the whole butternut squash so it will be easier to scoop out while you eat.

Preparing the stuffing:

In a cast iron skillet you are going to add all your ingredients for the stuffing part, mix, and cook for a few minutes. Then add the mixture to your butternut squash boats and enjoy.

 

Great option for meal prepping:

This is a great item to meal prep ahead of time by preparing your stuffing and roasting your butternut squash. Then the day you plan on having you simply just reheat in the oven for 10 minutes and enjoy. This also taste just as good cold, so you could have this as a meal on-the-go.

Stuffed butternut squash boats with a curried quinoa, chickpea filling

Ingredients

  • 1 butternut squash cut in half and seeds scooped out
  • 1 cup cooked quinoa cooked in vegetable broth
  • 1 can chickpeas drained and rinsed
  • 2 handfuls of spinach
  • 1/2 cup dried cranberries
  • 1 tsp curry
  • 1/4 cup raw pumpkin seeds
  • 1/2 tsp turmeric
  • 1/4 tsp coriander
  • 1/4 tsp cumin
  • 1/4 tsp cinnamon
  • Salt + pepper to taste
  • 1 Tbsp Maple syrup Optional

Instructions

  • Cook your butternut squash 425 for 30 minutes, once done make slits in butternut squash. 
  • Cook quinoa with vegetable broth according to package
  • Once quinoa is done add chickpeas, pumpkin seeds, spinach, cranberries, seasonings to pot, mix, and cook for a couple minutes
  •  Add stuffing mixture to butternut squash and enjoy!
