Roasted Maple Cinnamon Sweet potatoes:

Nothing says fall more than these roasted maple cinnamon cranberry sweet potatoes. This flavor combination is one of my favorites this time of year. The sweet and tart combination leaves me wanting more after every bite.

 

Ingredients you will need:

  1. Sweet potatoes
  2. Fresh organic cranberries
  3. Maple Syrup
  4. Vanilla bean ghee (substitute coconut oil or butter)
  5. Cinnamon
  6. Nutmeg
  7. Candied pecans

How to prepare the dish:

I add all the ingredients (except the candied pecans and cranberries) to a baking dish, and bake 400 F for 25-30 minutes. Because I don’t want the cranberries to turn into mush, I add them in half way through the baking time. Once the dish is done I let cool and sprinkle crushed candied pecans on top.

Meal prep ahead of time:

I like meal prep these ahead of time, especially if I plan on making these for Thanksgiving. It allows me once less thing I have to prepare the day of. I will either bake ahead of time or I will have the casserole already prepared so that the morning of I can just add to oven and bake.

Makes 3 cups

Ingredients

  • 2 sweet potatoes peeled
  • 1 cup fresh cranberries
  • 2 Tbsp melted vanilla bean ghee
  • 2 Tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup candied pecans

Instructions

  • Peel and chop your sweet potatoes
  • Add sweet potatoes to a baking dish (any size works)
  • Add melted ghee, maple syrup, and seasonings, and mix
  • Bake 400 for 25-30 minutes at the half way point add in the cranberries
  • Once done top with homemade candied pecans
