It is salad season and this roasted beet salad is sure to be a crowd pleaser. And it is a great prep ahead meal for those busy weeknights.
Ingredients you will need:
- Beets
- Olive oil
- Salt and pepper
- Lemon
- Orange
- Red wine vinegar
- Manuka honey
- Halloumi cheese
- Ghee or any oil you use
- Supergreens
- Red onion
- Homemade candied pecans
How to prepare roasted beets:
The first thing you are going to want to prepare, is the roasted beets. Peel the beets, chop into bite size pieces, add to a lined baking sheet, and add olive oil, salt + pepper. And roast the beets 400°F for 30-35 minutes or until the beets are fork tender. But make sure to let them cool completely before adding to the salad or else it will wilt the salad.
Honey Halloumi:
And while the beets are roasting, prepare the honey halloumi cheese. Add the ghee or any oil you are using to a pan and warm for a minute or so on medium heat. And add the sliced halloumi cheese to pan and drizzle manuka honey all over the cheese. Cook a few minutes on each side and let cool before adding to salad.
Preparing the dressing:
Preparing the homemade orange honey dressing is simple. Add all the ingredients to a jar and shake it all up. Store the leftovers in the refrigerator.
Putting the salad together:
And once everything is done, start layering up the salt. Add the greens to a bowl, add roasted beets, sliced red onions, honey halloumi cheese, candied pecans, drizzle the dressing over the salad, and toss.

- 1 large orange juiced
- 1 orange Zested about 2 Tbsp

- Halloumi cheese
- 1 Tbsp ghee or any oil you use
- 1 Tbsp manuka honey
Additional ingredients:
- Super greens or spinach
- Sliced red onions
- Optional: diced oranges
- Homemade candied pecans
