Pesto shrimp “pasta:”

This week’s meal prep was all about quick and easy. And this one pan pesto shrimp “pasta,” is so simple but oh so delicious. I used most of the items from my Trader Joe’s haul but don’t worry if you don’t have access to Trader Joe’s you can still make this dish at home.

Ingredients you will need:

    1. Wild caught shrimp
    2. Chopped red onions
    3. Trader Joe’s broccoli slaw (but if you can’t find it make your own slaw at home by using the stems of broccoli and carrots in food processor or just use regular pasta)
    4. Trader Joe’s kale, cashews, and basil pesto or make my homemade pesto
    5. Salt and pepper to taste
    6. Fresh chopped cilantro

How to prepare:

This dish is super easy to prepare and only takes 10 minutes to make! I first add my ghee to a large pan and warm. Then I add my red onions, salt and pepper, and sauté for a few minutes. Next, I add in my shrimp and cook a couple minutes. And then I add the pesto, mix, and cook a few minutes. Lastly, I add my broccoli slaw, mix, and cook until the slaw is softened, about 4-5 minutes. Top with fresh cilantro and your meal is done.

Meal prep:

I like to meal prep this on Sunday and have it all ready for the week but it is such a quick meal that you can easily make after work if you are looking for something quick but delicious to make.

Storing:

Since I meal prep mine on Sunday, I like to portion it all out into 4 Tupperware’s and store in the refrigerator. And the day I plan on eating, I will reheat in my pan for a few minutes or eat it cold.

 

Pesto Shrimp “Pasta”

Serves 4

Ingredients

  • 1 Tbsp garlic ghee or any type of oil you use
  • 1/2 cup chopped red onions
  • 1 lb wild caught shrimp
  • 1 12 oz bag of Trader Joe’s broccoli slaw
  • 1 package of Trader Joe’s kale cashews and basil pesto
  • Salt and pepper to taste
  • 1/3 cup chopped cilantro

Instructions

  • Warm the ghee in a large pan
  • Add onions, salt and pepper to taste and sauté for a few minutes
  • Add in the shrimp and cook a couple minutes
  • Add the pesto and cook for a few minutes
  • Add the broccoli slaw, mix, and cook until slaw is softened (about 3-4 minutes)
  • Top with fresh cilantro
