Work has been crazy busy for me and the last thing I want to do after a long day at work is cook. However, when I can focus on making a 15 minute meal, it makes it easier for me to get it done. This combination has been my go to as of late. I intermix a variety of different proteins each week to make it exciting and not boring, but no matter what the cauliflower gnocchi will always be on my plate.

If you haven’t tried Trader Joe’s cauliflower gnocchi yet, you need to try it ASAP. I get a lot of comments about how other’s gnocchi turns out soggy when they make it. I am here to tell you to NOT follow the directions on the bag because you will definitely end up with some soggy gnocchi.

Here is how I prepare my crispy cauliflower gnocchi:

  1. Step 1: Heat your pan with ghee or any oil you use for cooking. You want to get the oil warm before adding your gnocchi
  2. Step 2: Add your frozen gnocchi to pan and cover pan for 5 minutes. Do not stir or open lid for these 5 minutes, let them be.
  3. Step 3: remove the lid and add salt + pepper and cook for another 5-8 minutes. You want to reduce stirring here, so each side can crisp up.
  4. Step 4: if they are getting stuck to pan you can either add more oil or 1 tbsp at a time of filtered water

I personally use my green pan original non stick skillet when making these. I have tried in my cast iron skillet and have found they get stuck easier using cast iron skillet.

Now for the shrimp you are going to cook in a cast iron skillet for a few minutes seasoned with Primal Palates meat and potato seasoning. While your shrimp is cooking you are going to roast your asparagus that I seasoned with avocado oil, salt + pepper, bake 400 for 15-20 minutes.

Pan fried shrimp and gnocchi

Ingredients

Pan fried cauliflower gnocchi

  • 1 bag of trader Joes cauliflower gnocchi
  • 1-2 Tbsp california garlic ghee sub avocado oil, coconut oil, butter
  • Salt and pepper

Roasted Asparagus

  • Asparagus
  • Couple sprays of avocado oil
  • Salt and pepper

Pan fried shrimp

  • 12 wild caught shrimp
  • 1 Tbsp primal palate meat and potato seasoning
  • 1-2 Tbsp fourthandheart California garlic + additional for pan

Instructions

Pan fried cauliflower gnocchi

  • Add ghee to pan on medium heat
  • Add frozen ghee and cover pan for 5 minutes (not stirring)
  • Take lid off, add salt + pepper, and stir
  • Cook 5-10 minutes stirring occasionally with lid off and you get the golden crust on gnocchi

Roasted Asparagus

  • Add to a baking dish lined with parchment paper
  • Bake 400 for 15-20 minutes

Pan fried shrimp

  • Heat pan with ghee on medium heat
  • Season your shrimp with melted ghee and meat and potato seasoning
  • Add to pan and cook a couple minutes each side
