If you are needing a quick week night dinner to add to your rotation, add this maple pecan crusted salmon with a turmeric cauliflower mash, and steamed green beans. There is something about adding nuts to seafood that just makes my heart swoon and not to mention it is super easy and quick to prepare.

First things first, prepare your cauliflower mash, since the cauliflower will take the longest to cook. Add cauliflower to a roasting pan lined with parchment paper. Season with avocado oil, whole garlic cloves, salt + pepper, and turmeric, roast 400 degrees for 20-25 minutes. Once your cauliflower is done, either add to a blender and blend up, use an immersion blender and blend, or use a potato masher to mash up.

For the salmon you are going to want to use wild caught salmon filets, add some avocado oil, maple syrup to salmon. Then add some salt + pepper and top with crushed pecans. Bake 350 for 15-17 minutes.

Lastly, you are going to steam your green beans in a steam basket for 5-7 minutes. Then drain water add back to pan and sauté with some ghee for a few minutes.

If you want to speed up the process you can also use your instant pot to steam your cauliflower. You will need to add the trivet to pot with 1 cup water, add your cauliflower to trivet, set to steam high pressure for 4 minutes. Then quick release of pressure, add garlic, salt + pepper, turmeric, and with an immersion blender or potato masher, mash.

Maple pecan crusted salmon

Ingredients

  • 2 wild caught salmon filets
  • 1 Tbsp avocado oil
  • 1 Tbsp maple syrup
  • 1/4 cup crushed pecans
  • Salt + pepper to taste

Turmeric garlic cauliflower mash

  • 1 small head of cauliflower
  • 3 garlic cloves
  • 1 Tbsp avocado oil
  • 1/2 tsp turmeric
  • Salt + pepper to taste
  • Green beans

Instructions

Maple pecan crusted salmon

  • Add everything to salmon and bake 350 15-17 minutes.

Turmeric garlic cauliflower mash

  • Roast 400 for 25-30 minutes, then with an immersion blender blend.

Green beans

  • Steam until fork tender, drain water, add back to same pan with garlic ghee and sauté for 5 minutes.
