Instant Pot BBQ Chicken salad:
Todd has been working a lot lately and with it heating up I am trying to make him refreshing meals like this instant pot BBQ chicken salad. He is not too keen on salads, but I am trying to load them up with his favorites so that he will at least try them.
Instant pot cooking:
One of my favorite ways to cook chicken or meat has been in my instant pot. It not only is super easy, but it leaves the chicken or meat so tender it basically melts in your mouth. And what I have found with the instant pot is, it just takes some practicing as far as timing goes. But the nice thing is, you really can’t mess or ruin anything when cooking in the instant pot.
Keto Friendly:
This meal is Keto friendly and you can easily make it Whole30 friendly by simply removing the cheese if that is your jam!
To make the instant bbq chicken this is what you will need:
- Buy Ranch Direct chopped chicken breast
- Primal Kitchen Foods Original unsweetened BBQ sauce
- Filtered water or you can use chicken bone broth
- Salt and pepper to taste
I Simply add all the above ingredients to my instant pot, closed instant pot, sealed the valve, and set to manual high pressure for 5 minutes. Once it is done I let the pressure release naturally (about 10-12 minutes). But I added my chicken chopped but you can also do shredded by adding the whole breast in and shredding once done.
What I added to the salad:
- Hard boiled egg
- Cheese
- Buy Ranch Direct cooked bacon
- Cherry tomatoes
- Avocado
- Instant pot BBQ chicken
- Supergreens
- For dressing we used Primal Kitchen Foods Ranch dressing made with avocado oil (our favorite)
Meal prep ahead:
Since I meal prepped these on Sunday, I placed them in individual Tupperwares with the dressing on the side so that Todd and I could easily grab and go in the morning.
Instant Pot BBQ Chicken Salad
Ingredients
Instant Pot BBQ Chicken
- 1/2 lb chicken breast diced up
- 1/2 cup Primal Kitchen Foods original unsweetened bbq sauce
- 1/2 cup filtered water or bone broth
- Salt and pepper to taste
Salad Toppings
- 2 Hard boiled pasture raised eggs
- 2 Tbsp Cheese of your choosing
- 2 Tbsp Cherry Tomatoes
- 1 small avocado
- 2 Tbsp Primal Kitchen Foods Ranch Dressing
- 2 slices cooked Buy Ranch Direct Bacon
Instructions
- Add all to instant pot
- Close, seal valve, set to manual high pressure for 5 minutes
- Once done let pressure release naturally (10-12 minutes)
- Assemble your salad with all the toppings and drizzle with Primal Kitchen Foods Ranch Dressing
