Meal Prep:

I like to meal prep every Sunday for my busy work weeks. Sometimes I’ll batch cook meals, where I have the full meals already prepped for the week. And other times, I’ll do a buffet style of various items, to be able to throw together quick options during the week. Check out this post to learn more about how I meal prep.

5) Top with reheated meatballs with tomato sauce

Meatballs:

One of my favorite items to meal prep, meatballs! Because not only are the flavor combinations endless. But they make a great main ingredients to be used in a variety of dishes for the week.

How to prepare the meatballs:

Preparing the meatballs is easy! I mix the ground meat, egg, seasonings, and pork rinds (can use bread crumbs in place), roll into balls, and cook in my air fryer 370 for 12-15 minutes. But I personally like to cook less time. Because during the week i’ll be reheating again and this helps prevent drying them out.

Meals to use the meatballs in for the week:

  1. Meatball sub sandwich
  2. Cooked Zoodles with meatballs and tomato sauce

How to create zoodle pasta dish:

I spiralized 3 zucchini’s with my spiralizer. And I baked the zoodles with garlic avocado oil spray, salt and pepper, on 400 F for 10 minutes. And topped with meatballs that I reheated in my air fryer with some roasted garlic tomato sauce.

How to create the meatball sub sandwich:

I sliced two pieces of bread in half, added some cheese, melted the cheese a little bit (broil 1-2 minutes), added the reheated meatballs that I cooked with roasted garlic tomato sauce, topped with more cheese, and a little more sauce, and baked 300 F for 5-10 minutes.

And these are just a couple options to use the meal prepped meatballs. But there are so many other ways they can be enjoyed too.

Air Fried Keto and Paleo Friendly Meatballs:

Makes 15 Meatballs

Ingredients

  • 1 lb ground turkey Substitute any type of ground meat
  • 1/3 cup crushed pork rinds
  • 1 Tbsp diced jalapeño Optional
  • 1/3 cup diced onions
  • 1/4 cup diced cilantro or parsley + and extra for garnish
  • 1 large pasture raised egg
  • 1 tsp garlic powder
  • 1 Tbsp primal palate super gyro (substitute 1/4 tsp oregano, 1/4 tsp thyme)
  • 1/2 tsp turmeric
  • Salt + pepper to taste
  • 1/2 cup Tomato sauce of your choice

Instructions

  • Add everything to a bowl and mix with your hands
  • Roll into 15 meatballs
  • Cook in air fryer 370 for 12-15 minutes or bake 350 F for 20-25 minutes
  • If enjoying that night, add cooked meatballs to a pan with tomato sauce and simmer on low until sauce is heated
  • If eating during the week: Add tomato sauce of your choice to the meatballs, add to air fryer and reheat 300 for 10-12 minutes.
  • Enjoy over zoodles, pasta, or in a meatball sub sandwich

 

Zoodle "Pasta" With Air Fried Meatballs

Serves 1

Ingredients

  • 3 medium zucchini's
  • 1 tsp garlic avocado oil spray
  • Salt and pepper to taste
  • 4 already prepped meatballs with tomato sauce

Instructions

  • Spiralize zucchini
  • Add to a lined baking sheet and spray with garlic avocaod oil spray, salt and pepper
  • Bake 400 F for 10 minutes
  • Top with reheated air fried meatballs with tomato sauce in air fryer 300 for 10-12 minutes

 

Meatball Sub Sandwich

Serves 1-2

Ingredients

  • 2 Bolillos rolls Substitute any type of bread rolls
  • 4 slices cheese of choice
  • 4 already prepped meatballs with tomato sauce
  • 2 Tbsp tomato sauce

Instructions

  • Slice the rolls in half
  • Add a 1 slice of cheese to each roll
  • Add to oven on broil for 1-2 minutes to melt cheese a bit
  • Reheat the meatballs with tomato sauce in airfryer 300 10-12 minutes
  • Slice the meatballs in half
  • Place on top of the melted cheese
  • Place the last piece of cheese on top
  • Add rest of tomato sauce to each roll
  • Bake 300 F for 8-10 minutes (keep an eye out so the bread doesn't get too crispy)
