Now you all know I am about quick, easy, delicious weeknight meals, and this is one you all are definitely going to need to add to your weeknight meal rotation. I already had my instant pot potato salad meal prepped, so this was one less thing I had to do after work. I simply roasted my broccolini and grilled my salmon filet on my grill pan. I suggest if you are planning on making this dish you prep your potato salad on Sunday or whenever you do your meal prep, because it taste extra delicious the second or third day of sitting in the refrigerator.

What you will want to get started first is the roasted broccolini since this will take longer than your salmon. The key to getting your meals done quickly is multi tasking in the kitchen. This allows for all items of your meals to be done at the same time for a quick 15 minute dinner prep.

Add your broccolini to a baking sheet line with parchment paper, spray with some avocado oil and season with salt + pepper, bake 400 for 15 minutes.

What you will need for the salmon is basic ingredients:

  1. Wild caught salmon filet which I buy from Sprouts
  2. Primal Palate seafood seasoning
  3. Coriander
  4. Garlic Avocado oil spray
  5. Grill pan

Season your salmon filet with the Garlic avocado oil spray, seafood seasoning, coriander, and add to a hot grill pan with some oil. Cook skin side down first for a couple minutes and then flip and cook another few minutes.

Once everything is done cooking assemble your plate and enjoy this 15 minute dinner after a long day at work!

Grilled salmon bowl:

Ingredients

Wild caught salmon

  • 1 6oz Wild caught salmon
  • 1 Tbsp Primal Palate seafood seasoning
  • ½ tsp smoked paprika
  • ½ tsp coriander
  • Chosen foods garlic avocado oil spray

Roasted broccolini:

  • 1 head of broccolini
  • Couple sprays of Garlic Avocado oil spray from Chosen Foods
  • Salt and pepper

Instant pot potato salad

  • 6 red potatoes chopped
  • 1 cup water
  • 1/4 cup mayo
  • 1/4 cup spicy brown mustard
  • 2 tbsp chopped dill
  • 1/3 cup chopped green onions
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 lemon juiced
  • 2 tbsp Apple cider vinegar

Instructions

Wild caught salmon

  • Spray your wild caught salmon with garlic avocado oil spray
  • Season with seafood seasoning, smoked paprika, and coriander
  • Heat a grill pan with avocado oil
  • Once pan is warm add your salmon fillet skin down first and cook a couple minutes
  • Flip and cook another few minutes

Roasted broccolini:

  • Roast 425 for 15 minutes

Instant pot potato salad

  • Chop your red potatoes into bite size pieces
  • Add water, trivet, and red potatoes to instant pot
  • Cover instant pot, seal valve, set instant pot on steam high pressure for 10 minutes
  • Once done quick release of pressure and let cool
  • Mix mayo, mustard, apple cider vinegar, lemon juice, and pour over the potatoes, and mix
  • Add green onions, dill, paprika, salt + pepper, and mix
  • Store in fridge for an hour before serving
