Grain-Free Pumpkin Pie Pancakes:
Weekends are meant for a huge stack of pumpkin pie pancakes with sautéed cinnamon vanilla Madagascar apples right? I look forward to the weekend because I can actually take the time to make a fresh breakfast, sit and enjoy my meal without having to stare at traffic. These pancakes are super easy to prepare and are perfect for meal prepping too.
Ingredients you will need:
- Pumpkin puree
- 2 eggs
- Coconut milk
- Pecan butter
- Vanilla extract
- Baking soda
- Almond flour
- Coconut flour
- Optional: Flaxseed meal
- Pumpkin spice
- Cinnamon
- Cardamom
- Coconut shreds (unsweetened)
- Pecans
- Fourth and Heart Vanilla Madagascar ghee
Are there any substitutions?
For this recipe if you don’t have the pumpkin spice you can use nutmeg, ginger, ground cloves, and cinnamon. I would suggest doing about 1/4 tsp for each. If you don’t have the ghee you can substitute coconut oil or butter. Sorry I haven’t tried any substitutes for the flour so I won’t have an answer for you guys.
Steps for making pancakes:
First add the wet ingredients (except the pecan butter) and mix. Then you are going to add in the dry ingredients (except the pecans and coconut shreds and mix. I like to let my batter sit at room temperature for about 5 minutes but this is totally optional. Heat your pan with the vanilla Madagascar ghee, add about 1/4 cup of the batter, and cook for a couple minutes on each side.
How to make sautéed apples:
These pancakes aren’t complete without the toppings right? So grab your favorite apple, dice it up, add some ghee to a pan, add diced apple, cinnamon, and sauté for about 5 minutes. Once your apples are done, add on top of your stack of pancakes, drizzle pecan butter, and sprinkle raw coconut shreds. And then the best part…DEVOUR them!

Ingredients
Pumpkin Pie Pancakes
- 2 large organic pasture raised eggs
- 1/2 cup coconut milk Sub any milk you prefer
- 1/3 cup pumpkin purée
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 1/2 tsp pumpkin spice
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1 Tbsp flaxseed meal
- 1 Tbsp vanilla Madagascar ghee Sub coconut oil
Vanilla Madagascar cinnamon apples
- 1 gala Apple chopped
- 1 Tbsp Fourth and Heart vanilla Madagascar ghee Sub butter or coconut oil
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
Instructions
Pumpkin Pie Pancakes
- Mix everything in a bowl
- Heat a pan with ghee and add about 1/4 cup of batter
- Cook a couple minutes each side
