Classic Caesar salad:
This caesar salad with homemade grain-free croutons is super easy to prepare, perfect for meal prepping, and super tasty. I’ve been trying to create healthier options of Todd’s favorites in order to help encourage him to eat out less. One of his favorites is caesar salad so I knew he would dig this easy meal that was prepared in no time.
What bread to use for croutons:
First things first, I prepared my grain-free croutons to go in the salad. If you haven’t tried making your own croutons yet, I highly suggest you give it a try. Because they are super easy to prepare and you can use your favorite grain-free, gluten-free, paleo bread. I personally love AWGBakery bread because it is the best tasting gluten-free bread I have had.
How to prepare the croutons:
Preparing the croutons only requires 3 ingredients, takes no time, and is fool-proof. Simply chop your bread into bite size pieces, add melted ghee, seasonings, and mix so that all pieces are well coated. And then add croutons to a lined baking sheet, bake 400 F for 15 minutes, and once baked for 15 minutes shake around a bit and cook an additional 5 minutes.
Assembling the salad:
I used chopped romaine lettuce, shredded rotisserie chicken, parmesan cheese, and Primal Kitchen Foods caesar salad dressing.
Perfect for meal prepped lunches:
The nice thing with this meal is that I meal prepped extra so that I had lunches prepped for a couple days for the week. And just make sure if you are meal prepping these, that you keep the dressing on the side. Because if you add the dressing while meal prepping it will leave your salad soggy.
Homemade grain-free croutons
Ingredients
- 4-5 slices Awgbakery grain-free bread Sub any bread you use
- 2 Tbsp Fourth and Heart California garlic ghee Sub avocado oil and 1/2 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp dried basil
Instructions
- Add everything to a bowl, add melted ghee, seasoning, and mix
- Add to a lined baking sheet
- Bake 400 for 15 minutes and then shake and cook an additional 5 minutes.
- Store leftovers in a mason jar for a few days
