Nothing says spring more than this cilantro pesto caprese pasta salad!!! This has been one of my go to meals during the week when I need something delicious, easy, and quick to prepare.

What you will need for this to make at home includes:

  1. Gluten free pasta of your choice. I love using Jovial Foods gluten free Farfalle
  2. Asparagus
  3. Mushrooms
  4. Cherry tomatoes
  5. Homemade cilantro pesto
  6. Mozzarella balls

First things first cook your pasta according to the box. Once you have that going start sautéing your mushrooms, cherry tomatoes, and asparagus with some oil in a separate pan. While you have those two things going, add all your ingredients for the pesto into your food processor and process for about 10-15 seconds and set aside. Once your pasta is done cooking, you are going drain the water, add pasta back to pot, add the sauteed vegetables, pesto, and mix. Fold in your fresh mozzarella balls and enjoy!

I love meal prepping this pasta dish on Sunday because not only does it taste delicious by itself, but you can add a simple protein such as wild caught salmon with it to make a delicious balanced meal. This meal taste good cold or warm which also makes for a perfect on-the-go meal.

Cilantro Pesto Caprese Pasta Salad

Ingredients

Cilantro Pesto caprese pasta salad

  • 1 box Jovial Foods gluten free pasta Sub any preferred pasta
  • 1/2 cup hemp seed spinach cilantro pesto see recipe below
  • 1/2 cup cherry tomatoes
  • 1 cup mushrooms
  • 1 cup chopped asparagus
  • 1/2 cup Mozzarella balls

Dairy free hemp seed spinach cilantro pesto

  • 1 cup basil
  • Handful of cilantro
  • Handful of spinach
  • 2 garlic cloves
  • 1/4 cup hemp seeds
  • 1/4 cup olive oil
  • 1/2 cup pine nuts
  • 1 lemon juiced
  • Pinch of Celtic sea salt

Instructions

Cilantro Pesto Caprese Pasta Salad

  • Cook your pasta according to box
  • In a separate pan saute your mushrooms, cherry tomatoes, and asparagus with some oil for a 5-7 minutes
  • Prepare your pesto by adding all ingredients for the pesto in a food processor and processing for about 10-15 seconds
  • Once pasta is done cooking strain the water and place cooked pasta back in same pot
  • Add your pesto along with sautéed vegetables and mix 
  • Add fresh mozzarella balls and enjoy
