Where are all my tuna cake lovers at? Tuna cakes are one of my favorites to meal prep for a quick and delicious meal. Not only are they super easy and quick to prepare but you can switch up the flavor combinations, which makes your meals exciting and never boring.

If you aren’t familiar with my meal prep’s, I typically like to prepare something that could  be combined into a variety of meals to keep the leftovers exciting throughout the week. This keeps the meals exciting and prevents me from getting bored with my meals that i meal prepped on Sunday’s.

For example, I took my chipotle sweet potato tuna cakes and turned it into a delicious loaded salad. Which has the tuna cakes, greens, avocado, cucumbers, and more roasted sweet potatoes, because why not!

For the tuna cakes the first thing you want to do is roast your sweet potatoes. I personally love using Japanese sweet potatoes (these are the white sweet potatoes). These just have such an amazing flavor and I prefer them over traditional sweet potatoes. I will peel my sweet potatoes, cut into rounds, add to a baking dish lined with parchment paper, and cook 400 degrees for 30-35 minutes. Once done you want to mash your sweet potatoes.

You could also steam your sweet potatoes in your instant pot if you have one. I do mine on manual high pressure for 4 minutes with one cup of water. Once done I release the pressure and mash.

Then once your sweet potatoes are done add the rest of the ingredients into a bowl, mix, and form into patties. Then you will heat a pan with some avocado oil and cook your patties a couple minutes on each side. Be careful when flipping because these don’t have any flour they are more delicate and may fall apart.

Then store in your fridge in an airtight container for up to 4 days. You can reheat by putting it in the oven for a few minutes or enjoy them cold.

 

Chipotle sweet potato tuna cakes

Ingredients

  • 2 eggs
  • 1 cup peeled and roasted Japanese sweet potato
  • 1/4 cup green onions
  • 1/3 cup cilantro
  • 1/4 cup red bell pepper
  • 2 cans tuna
  • 2 Tbsp Sirkensingtons chipotle mayo
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder

Instructions

  • Roast your peeled sweet potatoes 400 degrees for 30-35 minutes. 
  • Mix all ingredients in a bowl, roll into balls, and form patties
  • Add some avocado oil to a pan and cook your patties a couple minutes each side
