Chocolate Chip Banana Bread Baked Oats:

There really is something about banana bread that I can’t get enough of. However, if you don’t know this about me by now, I love creating a variety of meals every week. Because I definitely can’t eat the same thing everyday, so getting creative with foods I am craving is something I enjoy doing.

How to use up your ripe bananas:

I had some ripe bananas to use up but didn’t want to make another banana bread recipe. And so, I decided to mix it up and take a similar approach to my chocolate chip banana bread recipe. But created some delicious vegan chocolate chip banana bread baked oats.


Why baked oats?

If you haven’t tried baked oats yet, I really suggest you get on it. Because it taste like cake, but with a healthier spin, that you will feel good about eating. And these taste good either fresh out of the oven or cold. When eaten cold it almost reminds me of overnight oats but thicker since they have been baked. I hope these make your busy mornings a little bit easier.

Ingredients you will need:

  1. Sprouted gluten-free oats
  2. Cashew mylk or any type of plant based mylk you have on hand
  3. Baking powder
  4. Cinnamon
  5. Chia seeds
  6. Hemp seeds
  7. Vanilla extract
  8. Maple syrup
  9. Mini chocolate chips
  10. Ripe banana
How to prepare:

What I love about these individual baked oats is they are simple easy to prepare. And these can be meal prepped ahead of time for a quick breakfast option. I simple mix everything in a medium size bowl, spray my individual ramekins with some coconut oil, and bake 350 F for 20-25 minutes.



Banana Bread Baked Oats

Makes 2

Ingredients

  • 1 cup sprouted gluten free oats
  • 1 cup homemade cashew mylk (sub any plant based mylk)
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 4 Tbsp chia seeds
  • 4 Tbsp hemp seeds
  • 2 tsp vanilla extract
  • 2 tbsp maple syrup
  • Handful of mini chocolate chips
  • 1 banana mashed

Instructions

  • Mix all ingredients together in a medium bowl
  • Spray two ramekins with coconut oil
  • Bake 350 for 20-25 minutes.
