Air Fried Zucchini Fries:

This week’s meal prep was all about zucchini. And these air fried zucchini fries came our so delicious I wish I had meal prepped more!

Ingredients you will need:

  1. Egg
  2. Zucchini
  3. Salt and pepper to taste
  4. Nut crumbs  (substitute panko bread crumbs or regular bread crumbs)
  5. Italian seasoning
  6. Garlic powder
  7. Ghee or any oil you use

How to prep the zucchini:

The first thing I like to do is make sure I draw out the water in my zucchini. And the way I do this, is by adding my sliced zucchini fries to a colander, sprinkle some sea salt all over, and let it sit for 10 minutes. And once it has sit for 10 minutes I use a towel and dab off all the moisture.

Prepping the fries:

In one bowl, whisk the egg with 1 tbsp of filtered water and set aside. In another bowl, add the nut crumbs, salt + pepper, Italian seasoning, garlic powder and mix. And then dip your zucchini fries in egg mixture, then the nut crumbs, and add to a greased air fryer dish.

Air Frying fries:

I cooked my fries in my air fryer on 400 for 15 minutes. But if you don’t have an air fryer you could also bake or pan fry these. And while they are cooking, prep the lemon pesto garlic aioli for dipping them in.

How to store:

Once the fries are done I let them cool completely before transferring to an airtight container and storing in the refrigerator.

How do you reheat?

I will either stick back in the air fryer for a few minutes to reheat or I will add to my convection oven and broil a few minutes.


Air fried zucchini fries


  • 1 zucchini
  • 1 egg
  • 1/2 cup original nut crumbs
  • 1 Tbsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


  • Slice zucchini into fries
  • Sprinkle sea salt over them and let sit for 10 minutes to draw out water
  • Pat dry with a paper towel
  • Dip into egg mixture
  • Dip into nut crumbs
  • Add to sprayed air fryer pan
  • Cook 400 for 15 minutes
