Are you a pancake lover or waffle lover? I personally love pancakes, because just the thought of cleaning my waffle maker, makes me tired! If you don’t know this about me, but I love finding creative way’s to use a variety of ingredients. Like plantains, would you have thought about using these in your baked goodies? Well I am hear to tell you, they are a game changer and you must try the next time you find some plantains in your grocery store.

Now you are probably wondering what does a plantain taste like? I would say it is more on the starchier side, similar to potato texture, and less sweet compared to a banana. For this recipe I am going to suggest you use a more ripe plantain. The way you will know it is ripe is if it is more of a yellow color with black spotting. If you can’t find ripe one’s in the store, don’t worry grab the green ones, stick in your pantry for a couple day’s, and it will ripen up in no time.

I add all the ingredients into my high powered blender and blend up for a smooth batter. This also helps break down the plantains since they are a lot harder than bananas and if you try mixing in a bowl, you will end up with chunks of plantains.

Vegan chocolate chip plantain pancakes

Makes 6-8 small pancakes

Ingredients

  • 1 ripe plantain sub banana
  • 1/2 cup coconut milk
  • 1 tsp vanilla extract
  • 2 flax eggs 2 tbsp flaxseed meal + 6 Tbsp water let sit for 15 minutes
  • 1 tbsp maple syrup
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cardamom
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tbsp coconut oil
  • Handful or two of mini chocolate chips

Instructions

  • Prepare flax eggs by adding water and flaxseed meal to bowl and let sit for 15 minutes
  • Mix wet ingredients
  • Add in dry ingredients and mix
  • Fold in chocolate chips
  • Add coconut oil to pan
  • Use 1/4 cup of batter, add to pan, cook a couple minutes each side
