Roasted Seaweed Snack

I seriously can’t get enough of this snack combo. It is one of my go to snacks when I need something quick and easily transportable. I simply meal prep a bunch of hard boiled eggs on Sunday to have ready to go for my work week. In the morning I will peel my eggs and chop and add to a tupperware with some chopped avocado. When I am ready to eat, I will add eggs and avocado to roasted seaweed, and sprinkle some Trader Joe’s Everything but the bagel sesame seed seasoning. Yes I pack my seasoning in my lunch pail, no shame in my game :). I hope you all enjoy this snack as much as I do. If you try it let me know what you think.

Roasted Seaweed Snack

Ingredients

  • 1 package original roasted seaweed
  • 2 hard boiled eggs
  • 1 tsp everything but the bagel sesame seed seasoning
  • ½ avocado

Instructions

  • Add your eggs to a pot with water
  • Bring water to a slow boil and cook your eggs for 10-12 minutes
  • Drain hot water and add ice to pot with cold water and let eggs sit for 5 minutes in ice bath
  • Peel and cut your hard boiled eggs
  • Add to roasted seaweed with avocado and sprinkle of everything but the bagel sesame seed seasoning
