Paleo Granola:

I wanted to make a paleo granola that could be enjoyed in a variety of ways. And since I am back to work today snacks on-the-go are a must for me. This paleo granola is super easy to prepare, it is gluten-free, refined sugar free, and makes for a perfect meal prep item.

Here is what you will need:

  1. Pumpkin seeds
  2. Raw coconut shreds
  3. Pecans
  4. Almond slivers
  5. Manuka Honey or maple syrup
  6. Coconut oil
  7. Cinnamon
  8. Vanilla extract
  9. Hemp seeds
  10. Flaxseed meal
  11. Sugar-free cranberries

How to prepare:

Preparing the granola is super simple. First, I add my nuts, seeds, coconut shreds, and cranberries to a lined baking sheet, and mix with my hands. Then I melt my coconut oil and Manuka honey and then add the vanilla extract, cinnamon and mix. Next I pour over the mixture and bake 275 F for about 30-35 minutes, mixing half way through.

How to store:

I store my granola in an airtight mason jar in the refrigerator. But they can also be store in individual Stasher bags if you are needing to take it on-the-go.

Using the granola:

The possibilities on how to use this granola are endless. I like to top my favorite dairy-free yogurt with it, turn it into a cereal by adding almond milk, or just eating it by itself as a snack.

Paleo Granola

Makes about 2 cups

Ingredients

  • 1 cup pumpkin seeds
  • 1 cup coconut shreds
  • 1 cup pecans
  • 1 1/2 cup almond slivers
  • 1/3 cup manuka honey sub maple syrup
  • 2 Tbsp coconut oil
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup hemp seeds
  • 1/2 cup flaxseed meal
  • 1/2 cup Sugar-free dried cranberries

Instructions

  • Add pumpkin seeds, coconut shreds, pecans, almonds,hemp seeds, flaxseed meal to a lined baking sheet and mix
  • Melt the coconut oil and Manuka honey
  • Add vanilla extract and cinnamon to melted coconut oil and honey, and mix
  • Pour over everything and mix
  • Bake 275 for 30-35 minutes mixing half way through
