Oven baked breakfast potatoes:

One of my most frequently asked questions over on Instagram, is how do I get my breakfast potatoes so crispy? And the answer is simple, don’t over crowd the pan! But I’ll also share more tips below on how to ensure crispy breakfast potatoes.

Ingredients you will need:

  1. Red potatoes or any type of potatoes you like
  2. Olive oil or avocado oil ( I prefer this avocado oil garlic oil spray)
  3. Meat and potato seasoning or garlic and herb seasoning (substitute any type of seasoning you prefer on your potatoes)
  4. Salt and pepper to taste

Prepping the potatoes:

Here are some other tips to getting crispy breakfast potatoes. Make sure to cut the potatoes the same size. Because this will allow the potatoes to cook at the same time and evenly. And the smaller the better in my opinion for crispy potatoes. But just don’t make them too small or else they will burn. And when adding to your lined baking sheet make sure they are not overlapping each other. Because this will create steamed potatoes versus crispy potatoes. And lastly, less is more when it come to adding oil. I personally prefer using the spray oil versus liquid oil.

Baking potatoes:

Once the potatoes are coated with the olive oil, seasoning, salt and pepper. Bake 425°F for 40-45 minutes, mixing half way. And if you want them extra crispy broil them for 5-10 minutes, keeping an eye on them so they don’t burn. Let the potatoes rest on baking sheet for 10 minute before serving.

And serve them with some scrambled eggs, bacon, avocado, and can’t forget the ketchup for dipping potatoes in. Better than any restaurant breakfast in my opinion.

Oven Baked Breakfast Potatoes:

Ingredients

  • 6 medium red potatoes
  • 1-2 Tbsp olive oil or avocado oil less is more
  • 1 1/2 Tbsp Primal Palate Meat and Potato seasoning or Garlic and Herb Seasoning
  • Salt and pepper to taste
  • 1/2 tsp paprika only use if using the Garlic and Herb seasoning

Instructions

Instructions:

  • Wash your potatoes really well and pat dry
  • Chop your potatoes into bite size pieces, make sure they are all same size
  • Add to a lined baking sheet
  • Drizzle the olive oil or spray with avocado oil spray, add seasoning, salt and pepper, and mix
  • Create an even layer as best as possible, you don’t want them overlapping, as this will make them steam versus get crispy. If you have to do two batches then do so.
  • Bake 425°F for 40-45 minutes, mixing half way through
  • Broil for 5-10 minutes for extra crispy but keep an eye on them so they don’t burn
  • Let rest in baking dish for 10 minutes before serving
