No Bake Turtle Brownies:
I know you all dig a good no bake dessert, and these no bake turtle brownies are a must try. They are made with real ingredients, perfect for a prep ahead treat, and are vegan, grain free, and dairy free.
Ingredients you will need:
- Medjool dates
- Macadamia nuts (substitute any nut/seed)
- Almonds (subtitle any nut/seed)
- Cacao powder (substitute cocoa powder)
- Vanilla extract
- Salt
- Coconut oil
- Cashew butter (substitute any nut/seed butter)
- Mini chocolate chips
- Almond slivers (substitute any nut/seed)
How to prepare the brownie base:
First start by preparing the brownie batter. Add all the ingredients to a food processor and process for about 45 seconds-1 minute. The batter should be sticky to touch. And add to a lined 8×8 baking dish and press down with your fingers to create an even layer. And freeze while preparing the date caramel topping.
How to prepare the date caramel:
Wipe down the food processor with a towel and add all the ingredients for the date caramel to the food processor. And process for about 30-45 seconds, scraping down the sides throughout, until a smooth, and creamy consistency is achieved. And then add to the top of the brownie mixture, and create an even layer.
Toppings:
I topped mine with mini chocolate chips, almond slivers, and drizzle of melted chocolate. But feel free to use whatever nut/seeds or chocolate chips you prefer on yours. And then let the bars freeze for at least 2 hours.
Cutting into bars:
Depending on how long you freeze your bars, you may need to let the bars sit at room temperature for a few minutes before slicing into bars. Because if they are too frozen, the brownie and caramel layers may separate. Feel free to cut into 12 larger bars or 24 bite size pieces.
How to store:
I like to store mine in an airtight container in the freezer. And when I am in the mood for one, I let it sit at room temperature for about 10-15 minutes before devouring.

- 1 cup macadamia nuts sub any nut/seeds you have
- 1 1/2 cups raw almonds sub any nut/seeds you have
- 1 cup dates pits removed
- 3/4 cup cacao powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup melted coconut oil
Brownie Instructions:
- Add all ingredients to a food processor and process for about 45 seconds
- Add to a lined 8x8 baking dish
- Press down with your fingers to create an even layer
- Store in freezer while prepping the caramel filling
Caramel Filling Ingredients:
- 1 cup dates pits removed
- 1 tsp vanilla extract
- Pinch of salt
- 3 Tbsp creamy cashew butter
- 1/4 cup melted coconut oil start with 1/4 cup oil and if you want it thinner add more 1-2 Tbsp at a time
Caramel Filling Instructions:
- Add all the ingredients to a food processor and process until you get a smooth creamy consistency
- Add to the top of the brownies
Toppings:
- 2 Tbsp mini chocolate chips
- 2 Tbsp almond slivers
- 1-2 Tbsp melted chocolate chips
Instructions for toppings:
- Top caramel filling with mini chocolate chips and slivered almonds
- Drizzle melted chocolate on top
- Freeze for at least 2 hours
- Cut into bars
- Store in airtight container in the freezer
- Let sit at room temperature for at least 10-15 minutes and enjoy
