No Bake Caramel Delights:

These no bake caramel delights remind me of the Girl Scout cookies only better!! No bake desserts are my jam because they are easy, delicious, and pretty much fool proof! So if you are looking for an easy dessert for your next holiday party or just a delicious treat to have stored in your freezer, then these are a must make.

Ingredients needed:

  1. Cashew butter
  2. Coconut shreds
  3. Vanilla extract
  4. Maple Syrup
  5. Medjool dates
  6. Salt

How to prepare the cookie layer:

The first step is to prepare the cookie layer. Add all the ingredients for the cookie layer to a food processor and process until you get a smooth consistency. Then add cookie layer to an 8×8 lined baking dish and store in the freezer while preparing the caramel filling.

Caramel filling:

To prepare the caramel filling first soak your medjool dates to soften. I prefer to soak my dates overnight but if you don’t have the time soaking them in warm water for at least 30 minutes will suffice. Once your dates are done soaking, drain the water, add all ingredients for caramel filling to food processor, and process until you get smooth consistency. Add the caramel filling to the top of the cookie layer, top with coconut shreds, and freeze for an hour.

Topping your bars:

While the bars are in the freezer, melt some chocolate with 1 tsp of coconut oil, drizzle your bars with the melted chocolate, and place back in freezer for a few minutes. Remove your bars from the baking dish and with a sharp knife cut into 9 large bars. But if you want bite size pieces cut into smaller bites.

Makes 9 large bars

Ingredients

Cookie Layer

  • 1 cup cashew butter
  • 1 cup coconut shreds
  • 1 tsp vanilla
  • 3 Tbsp maple syrup

Caramel Filling:

  • 1 cup soaked medjool dates
  • 2 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup cashew butter
  • 1 cup coconut shreds

Chocolate Drizzle

  • 1 tsp coconut oil
  • 1/2 cup chocolate chips

Instructions

Cookie Layer

  • Add all to food processor and process until you get a smooth consistency
  • Add to a lined 8x8 baking dish

Caramel Filling:

  • Process all ingredients in food processor
  • Add on top of cookie layer
  • Top with additional coconut shreds
  • Freeze for 1-2 hours
  • Drizzle melted chocolate on top
  • With a sharp knife cut into bars
  • Store in freezer or refrigerator

Chocolate drizzle

  • Add the coconut oil and chocolate chips to a small sauce pan, stir for a few seconds or until melted
  • Drizzle on top of the bars
