The freshest mango salsa for your summer time BBQ season. This salsa takes no time to prepare and it can be meal prepped in advance so its one less thing you have to do while preparing for entertaining. You simply just have to add all the ingredients to a bowl, mix, and store in the fridge. I paired mine with some plantain chips since I was doing a Whole30, but you can use whatever chips you prefer if you aren’t doing a Whole30 at the moment.

Now I know technically plantain chips could be argued as recreating “treats” or junk food with approved ingredients but I have never felt out of control when it comes to chips or cracker so I did allow myself to enjoy homemade plantain chips during my Whole30. Everyone has different reasons for doing a Whole30 reset and mine was simply to control my sugar dragon, so you must do what is best for your reset.

For the plantain chips I kept them simple. I peeled my plantains, cut into thin coins, sprayed some avocado oil on them, and added some salt + pepper. I set my air fryer to 360 and cooked my plantain chips for 20 minutes flipping halfway through.

Mango salsa with plantain chips

Ingredients

  • 1 cup Mango
  • 1/2 cup Cilantro
  • 1/2 cup Red onion
  • 1 Jalapeno deseeded
  • 1/3 cup Cherry tomatoes
  • 2 Persian cucumbers
  • 2 limes juiced
  • 1 tsp Garlic powder
  • Salt + pepper
  • 2 Plantains

Instructions

Plantains:

  • Cook in air fryer 360 for 20 minutes flipping halfway through.
  • Seasoned with salt and pepper to taste and some avocado oil.
