Grain Free Pumpkin Spice Chocolate Chip Muffins:

One of my favorite breakfast item to meal prep are muffins. Because they are easy, the flavor combinations are endless, and they are convenient for eating on-the-go. Now since it is the time of the year where your feed is flooded with all things pumpkin spice, it is only appropriate you make some of these STAT.

What you will need for muffins:

  1. Pumpkin puree
  2. Chocolate chips
  3. Vanilla extract
  4. Coconut oil
  5. Maple Syrup
  6. Pumpkin spice
  7. Baking soda
  8. Organic pasture raised eggs
  9. Almond flour

Easy steps for making the muffins:

Mix the wet ingredients, then add in the dry ingredients, and mix. Fold in the chocolate chips and add 1/4 cup of the batter to a muffin tin. Top with more chocolate chips and bake 350 F for 17-20 minutes or until a toothpick comes out clean.

  • 2 organic pasture raised eggs
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1/3 cup pumpkin puree
  • 1 tsp baking soda
  • 2 cups almond flour
  • 2 tsp Primal Palate pumpkin spice seasoning
  • 1/2 cup Chocolate chips


  • Add all to blender except chocolate chips
  • Fold in chocolate chips
  • Add 1/4 cup to muffin tin
  • Bake 350 for 17-20 minutes or until a toothpick comes out clean
