Pumpkin Pie French Toast:

All things pumpkin is my life motto right now! And lets be honest who doesn’t love a good homemade French toast? So as soon as I got my delivery of the yummiest grain free, gluten free, organic, vegan, paleo bread from AWG Bakery I knew I had to make some pumpkin pie French toast.

How to make French toast:

Making French toast might seem complicated but let me reassure you that it is the easiest thing you could possibly make! All you need to do is mix eggs, non-dairy milk, pumpkin spice, pumpkin puree, and cinnamon in a shallow dish. Once you have everything nice and mixed, dip your sliced bread into the batter and coat. Heat your pan with Vanilla Madagascar ghee for a cake like taste to your French toast and cook a couple minutes each side.

What to top your French toast with:

I personally like to keep it basic with some of my homemade nut/seed butter, maple syrup, and banana coins. But the possibilities are really endless here. Some other suggestions would be, candied pecans, sautéed cinnamon apples, sautéed bananas with candied pecans.

What you will need for the nut butter:

  1. Macadamia nuts
  2. Pumpkin seeds
  3. Pecans
  4. Almonds
  5. Chia Seeds
  6. Flaxseeds
  7. Unsweetened coconut shreds

How to make the nut/seed butter:

Simply add all the ingredients to a food processor and process for about 5-6 minutes. But be sure to stop and scrape down the sides of the food processor throughout the time. Once you get your creamy consistency, transfer to a mason jar, and let the butter cool before you close the jar.

Pumpkin pie French toast

Ingredients

  • 5-6 slices of grain free bread sub any bread
  • 3 eggs
  • 1/3 cup pumpkin puree
  • 1 1/2 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/4 cup cashew mylk sub any milk you use
  • 2 Tbsp Vanilla Madagascar ghee

Instructions

  • Mix the eggs, pumpkin puree, seasoning, and mylk in a shallow dish
  • Dip your bred into the mixture
  • Add ghee to pan and heat
  • Add your dipped bread to pan and cook a couple minutes each side
  • Top with banana coins, homemade Keto butter, and maple syrup

Homemade Keto butter

Makes 2 cups

Ingredients

  • 1 cup macadamia nuts
  • 1 cup pecans
  • 1/2 cup pumpkin seeds
  • 1 cup almond
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 2 cups unsweetened coconut shreds

Instructions

  • Add everything to food processor and process for 5-6 minutes
  • Store in an airtight mason jar
