My mom is my number one fan and is always requesting I make her all the goodies I share on my Instagram. So I thought since her birthday is coming up I was going to create some yummy chocolate  muffins to celebrate her birthday. Nothing says I love you more than some homemade baked goodies right?

These muffins are a cross between brownies and chocolate cake and include super foods such as; cacao, reishi, maca, thanks to the amazing cacao magic by Philosophie. If you don’t have Philosophie’s cacao magic on hand, you can just substitute regular cacao and they will be just as delicious. I also used Hu Kitchen’s new Earl Grey Cashew Butter Dark Chocolate because I was feeling EXTRA, but you can add in any chocolate you have on hand.

I never skimp on flavor with my recipe’s and even though it seems like there are a lot of ingredients, I promise you these are so easy to prepare. All you have to do is throw all your ingredients (except your chocolate) in a high powered blender, blend, fold in chopped chocolate, pour into lined muffin tins, and you are done! If you don’t want to use a blender you can simple just mix all the ingredients in a large bowl and follow the same steps.

Not only are these great for a birthday celebration but you can meal prep these on Sunday for a breakfast on-the-go or a nice little dessert. They freeze nicely so if you don’t want to eat the whole batch add a few to the freezer for another week you don’t have time to meal prep anything.

Double Chocolate Muffins

makes 10

Ingredients

  • 2 ripe bananas
  • 3 eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp vanilla extract
  • 1/2 cup Philosophie cacao magic sub cacao
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 hu kitchen earl grey cashew butter dark chocolate bars chopped up

Instructions

Instructions:

  • Mix wet Ingredients
  • then add in dry ingredients and mix
  • fold in chopped chocolate
  • add two scoops to lined muffin tins
  • Add more chopped chocolate on top
  • Bake 350 for 15-18 minutes
